Do you crave those tangy sour flavors? The ones that get your mouth salivating? Pickles, pepperoncini peppers, pickled onions? That tangy flavor that’s utterly delicious? When I kept coming across recipes on the web for a grinder sandwich with a tangy, creamy, slaw I knew I had to give it a try. This flavor profile is my husband’s favorite! There’s a reason this recipe has gone viral on TikTok. This sandwich is fabulously delicious and it’s easy to make at home too!
Jump to RecipeThe secret to the fantastic flavor in this sandwich is the delectable easy to make tangy slaw. It’s loaded with a creamy tanginess that is going to get your taste buds singing. There are just a handful of ingredients so be sure to use the highest quality you can afford.
Make the slaw:
In a small mixing bowl combine mayonnaise, garlic powder, oregano, salt and pepper.
Stir to combine.
Place shredded lettuce, sliced red onion, and pepperoncini peppers in a mixing bowl.
Add the mayo mixture and red wine vinegar to the lettuce, red onion, and pepperoncini peppers.
Stir to make a creamy slaw. Set aside.
Make the sandwiches:
Be sure to use good quality, fresh rolls for these sandwiches. A softer Hoagie roll or freshly baked Bolillo roll, with a crusty exterior and a soft and pillowy inside are perfect for these grinders. I love, love, love sour dough rolls, but their hard crust isn’t ideal for these sandwiches. You have to bite down through that hard delicious crust which pushes all the sandwich ingredients out the other end; not good! Stick with a softer roll for these grinder sandwiches.
Slice rolls in half using a serrated knife. Spread with horseradish sauce and mustard if using.
Top half the rolls with roast beef and mortadella. Then top each half with slices of salami and pepperoni.
You can use any combination of sliced deli meats that you have on hand. Sliced ham, turkey, Soppressata, Cotto salami, Genoa salami would all be delicious in this sandwich. You can also change up the type of cheese, try a Mozzarella, Monterey Jack, Pepper Jack, Colby Jack, Cheddar; any cheeses that melt well will be delicious.
Top sliced meats with Provolone cheese.
Place sandwiches in the oven and set the oven temperature to “broil”. Toast the sandwiches until the meats are slightly charred along the edges, the cheese has melted and it’s hot, bubbly and golden brown.
Remove toasted sandwiches from the oven and top one half of each sandwich with a generous heaping of the prepared slaw and tomato slices and the other half.
Sprinkle generously with grated Parmesan cheese and freshly ground black pepper.
Serve sandwiches immediately with lots of napkins, they’re messy to eat but they are oh so good!

Stop at the deli counter on your way home from work, pick up some cold cuts, and fresh rolls and you will have a delicious dinner on the table in about 20 minutes after you walk in the door. Save yourself a fortune and stop buying overpriced sandwiches from your local sandwich shop, these are just as good. I actually think they’re better! You can make sandwiches at home that rival all of those overpriced sammies…guaranteed!
Hoagie Grinder Sandwich
Ingredients
For the Slaw:
- ½ cup mayonaise
- ½ head iceberg lettuce, shredded or finely sliced
- ½ red onion, thinly sliced
- ⅓ cup sliced pepperoncini peppers, drained
- 2 tbsp red wine vinegar
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp pepper
For the sandwich:
- 4 Hoagie rolls
- ¼ lb salami, thinly sliced
- ¼ lb pepperoni, thinly sliced
- ½ lb Mortadella, thinly sliced
- ½ lb roast beef, thinly sliced
- 8 slices Provolone cheese
- 1 large tomato, sliced
- ¼ cup Parmesan cheese, grated
- 2 tbsp horseradish sauce, optional
- 2 tbsp mustard, optional
Instructions
Make the slaw:
- Place shredded lettuce, sliced red onion, and pepperoncini peppers in a mixing bowl.

- Remove toasted sandwiches from oven and top one half of each sandwich with tomato slices and the other half with a generous heaping of the prepared slaw.
- Sprinkle with additional grated Parmesan cheese and serve immediately with lots of napkins.
