Whenever I see a recipe popping up all over the internet with thousands and thousands of five star ratings I have to give it a try to see if it actually merits all the rave reviews. I love that this recipe uses common everyday ingredients and comes together in a snap. Not only does it call for some of my all time favorite veggies, corn and red bell peppers; it’s a creamy salad that my lettuce hating son actually enjoys. No lettuce in this recipe, just delicious veggies in a creamy sauce, studded with salty corn chips that add a lovely, crunchy texture. It’s an uncommon, unique and tasty combination.
Jump to RecipeTIP: Use fresh corn in the summer when it’s in season. Frozen, thawed corn can also be used instead of canned corn.
Start by preparing fresh ingredients. Dice red bell pepper and chop cilantro.
Place drained and rinsed corn, diced red bell pepper, and chopped cilantro in a mixing bowl.
Add mayonnaise, sour cream and lime juice.
Stir to combine. Cover and refrigerate until ready to serve.
Corn chips will start to soften after adding them to the salad.
Add corn chips right before you are ready to serve so they stay nice and crunchy.
Stir in Fritos to combine all the ingredients.
Taste and season with a little salt and pepper if needed. Serve immediately.
This salad can easily be customized to suit your personal preferences. Don’t like mayonnaise? Use less mayo and more sour cream. Don’t care for Cilantro? Use parsley instead. Like it extra crunchy? Stir in more corn chips. Don’t have a lime on hand? Use lemon juice instead. Add some shredded cheddar cheese for an even creamier, cheesy salad. Adding some chopped red onion would be a lovely addition as well. Their zesty lovely bite would be a delicious addition. Like a little heat? Add a diced jalapeño pepper to the mix. Customize this salad to suit your tastes.
GOOD TO KNOW: Recipe can easily be doubled, tripled or even quadrupled to feed a larger crowd.

Frito’s Corn Salad
Ingredients
- 15 oz can of whole kernel corn, drained and rinsed
- 1 red bell pepper, seeded and diced
- ½ cup fresh cilantro, chopped
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ lime, juiced about 1 tablespoon of juice
- 1¼ cups Frito's corn chips
- salt and pepper, to season
Instructions
- Place drained corn, diced red bell pepper, chopped cilantro, mayonnaise, sour cream and lime juice in a mixing bowl. Stir to combine.
- Cover and refrigerate until ready to serve.
- Stir in Frito's corn chips right before serving so they stay nice and crunchy.
