Short on time but want to prepare a meal that packs a lot of flavor? This dish fits the bill. Simple ingredients
Some nights your tummy is rumbling and you want something healthy to eat, that’s easy to prepare, and packed with loads of flavor. This recipe fits the bill perfectly! You can easily make this a vegetarian meal by leaving out the chicken.
First order of business is to get the noodles going, since they take the longest to cook. Boil according to package directions.
While the noodles are cooking, get out a glass jar with a tight fitting lid. Add all the dressing/sauce ingredients; soy sauce, sugar, minced garlic, rice vinegar, sesame oil, hot chili sauce, and canola oil, into the jar.
Screw the cap onto the jar and shake vigorously to combine.
Slice the green onions.
Spread chicken out on a large microwave safe plate, cover with a paper towel and heat in the microwave for 1-2 minutes.
Once the noodles are cooked, drain them and place them in a large bowl, top with the shredded chicken, and then pour on the dressing.
Toss everything together to combine and serve, topped with a sprinkling of sliced green onions.
This meal couldn’t be any easier! Plus, the simple sauce gives it a fantastic kick of Asian inspired flavor!
TIP: Check the vegetable crisper in the fridge and toss in whatever you have, red or green bell pepper, cut into match stick sized pieces, bean sprouts, sliced mushrooms, broccoli, asparagus; you can add almost any vegetables to this dish. Toss broccoli or asparagus into the boiling water along with the noodles for a couple minutes to par boil them and soften them up just a bit.
Sesame Chicken Noodles
- 16 ounces, Spaghetti Noodles
- 12-16 ounces shredded cooked Chicken
- 1/4 cup Soy Sauce
- 2 tablespoons Sugar
- 4 cloves Garlic, minced
- 2 tablespoons Rice Vinegar
- 3 tablespoons Pure Sesame Oil
- 1/2 to 1 teaspoon Hot Chili Oil, or Sriracha Hot Chili Sauce
- 4 tablespoons Canola Oil
- 4 whole Green Onions, sliced thin
Cook noodles according to package directions.
Using a small jar, combine all ingredients (except noodles and green onions).
Screw on cap and shake vigorously to combine.
Taste and adjust ingredients as needed.
Spread shredded chicken out on a large plate, cover with a paper towel and microwave for 1-2 minutes to heat it through.
Once noodles are cooked, drain and place in a large bowl.
Top with shredded chicken.
Pour sauce over warm noodles and shredded chicken and toss to coat.
Sprinkle with green onions and serve.
