I grew up eating Spam. My mother often used it instead of ham for sandwiches when I was in school. She used it in her macaroni salad (truth be told I wasn’t a big fan of her Macaroni Salad, sorry mom).
My favorite was when she would slice it and fry it up for breakfast and serve it along with scrambled eggs and toast. The crispy edges with the saltiness of the Spam is quite delish.
This recipe is a quick and tasty weeknight meal. It comes together in a under 30 minutes and my family gobbled it up. If you are not a fan of Spam you could easily change it out for diced ham, or even chicken.
Since it takes the longest to cook, you will want to start by making 3 cups of rice. You can read my post on how to cook rice here if you do not know how to do it. It is part of my Cooking Basics 101 series. 1 cup of uncooked rice will yield 3 cups of cooked rice which is how much you need for this recipe.
While the rice is cooking, heat 1 tablespoon oil in a large skillet over medium heat. Cook and stir to scramble 2 eggs. When cooked, remove from the pan and set aside, keep warm.
Add another tablespoon of oil to the skillet. When the oil is hot add diced spam, carrots and peas, 1/2 the green onions and chopped red bell pepper. Cook 4-5 minutes or until vegetables are tender and Spam starts to brown along the edges.
Stir in the cooked rice and egg. Sprinkle with soy sauce. Season with salt and pepper. Stir to combine and heat thoroughly.
Serve topped with additional green onions.
SPAM FRIED RICE
- 1 12-ounce can SPAM, diced
- 2 tablespoons vegetable oil, divided
- 2 eggs, beaten
- 1 cup frozen peas and diced carrots
- 1/4 cup chopped green onions
- 1/2 red bell pepper, chopped
- 3 cups cooked rice
- 3 tablespoons soy sauce
- In a large skillet, heat 1 tablespoon oil. Add eggs. Cook, stirring, to desired doneness. Remove from skillet and set aside.
- In the same skillet, heat remaining 1 tablespoon oil. Cook SPAM, carrots, green onions and bell pepper 4 minutes or until vegetables are tender.
- Stir in rice and egg. Sprinkle with soy sauce. Heat thoroughly.
- Garnish as desired with additional green onion.
