The Best Ever Slow Cooker Pepper Steak Sandwiches

Aren’t slow cooker meals the best? All it takes are a few minutes in the kitchen early in the morning before you head out the door and you end up with a delicious meal at the end of the day. Is there a better feeling than walking into the house after a long day to the delectable smell of dinner simmering away? Your mouth will definitely start watering the minute you step through the front door when you have this pepper steak cooking away in your slow cooker.

Start by browning the beef roast. You could skip this step if you are pressed for time, but searing the roast greatly increases the overall flavor. If you have the time I recommend doing it. Heat olive oil in a large skillet over medium heat.

Season sirloin roast with salt, pepper, garlic powder and barbecue seasoning.

Brown roast on all sides in skillet. Transfer to slow cooker. 

Add can of diced tomatoes to the slow cooker.

Add beef broth, soy sauce, Worcestershire sauce, and sugar. 

Mix water and corn starch together and pour the slurry over the ingredients in the slow cooker.

Add the minced garlic.

Top with sliced onions.

Cover and cook on high for 2-3 hours or on low for 4-5 hours.

Red bell peppers, not green peppers are what make these sandwiches so delectable! Adding them halfway through the cooking time keeps them crisper, but if you are going to be out of the house all day just add the peppers when you add the onions.

Slice the red bell peppers.

Add sliced red peppers to the slow cooker.

Cover and continue cooking either on high for another 2-3 hours or on low for another 4-5 hours or until beef is tender and shreds easily with a fork.

My old crockpot is my favorite. It’s been with me for over 25 years.

Shred or slice the beef and return the it to the slow cooker; stir to combine the beef with the pepper/onion mixture.

Assemble sandwiches:

Slice hoagie rolls in half lengthwise not cutting all the way through.

Cut each slice of cheese in half and place on the cut sides of each roll. Place rolls in the oven open faced, and broil until the cheese is melted and bubbly hot.

Place a generous heap of the pepper beef onto each roll and serve with a side of the juices for dipping if desired.

Oh my gosh, these sandwiches were so very good! My teenager ate two big sandwiches for dinner. I served the left overs a few nights later over a bed of creamy mashed potatoes. And it was even better! Whether you serve this pepper beef on hoagie rolls or over a bed of mashed potatoes, you are going to love it! And the slow cooker makes it a snap to make these any night of the week.

Ingredients
  

  • 2-3 lbs sirloin tip roast
  • salt, pepper, garlic powder, barbecue seasoning

  • 3 cloves garlic, minced
  • ¼ cup water
  • 2 tbsp corn starch
  • ½ cup beef broth
  • 1 medium onion, sliced
  • 2 large red bell peppers, sliced
  • 14.5 oz can of petit diced tomatoes
  • 3 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp sugar
  • 8 Hoagie rolls
  • 8 slices Provolone cheese

Instructions
 

Cook the beef/onion/pepper filling:

  • Heat olive oil in a large skillet over medium heat.
