- ½ medium head green cabbage, shredded
- ½ medium head red cabbage, shredded
- 4 oz carrots, shredded
- 1 cup mayonnaise
- 3 tbsp apple cider vinegar
- 1 tsp salt
- 1 tsp coarse ground pepper
Place shredded red and green cabbage in a large bowl.
Add shredded Carrots. Toss to combine.
In a small bowl whisk together mayonnaise, vinegar, salt and pepper until dressing is smooth and there are no lumps.
Pour dressing over cabbage and carrots.
Stir to combine and coat carrots and cabbage with the dressing.
Cover and refrigerate overnight.
Stir and serve chilled.
