Amish Creamy Coleslaw

Ingredients
  

  • ½ medium head green cabbage, shredded
  • ½ medium head red cabbage, shredded
  • 4 oz carrots, shredded
  • 1 cup mayonnaise
  • 3 tbsp apple cider vinegar
  • 1 tsp salt
  • 1 tsp coarse ground pepper

Instructions
 

  • Place shredded red and green cabbage in a large bowl.
  • Add shredded Carrots. Toss to combine.
  • In a small bowl whisk together mayonnaise, vinegar, salt and pepper until dressing is smooth and there are no lumps.
  • Pour dressing over cabbage and carrots.
  • Stir to combine and coat carrots and cabbage with the dressing.
  • Cover and refrigerate overnight.
  • Stir and serve chilled.
