An Old Fashioned Amish Classic Creamy Coleslaw Recipe

I think we can all agree, the Amish can cook like nobodies business! They are the masters at using simple, everyday, wholesome ingredients to create flavorful foods that withstand the test of time. This is one of those timeless classics that’s not only easy to make, but it uses just a few basic ingredients you probably have on hand all the time, plus it’s utterly delicious! This is one coleslaw you will be making over and over all summer long. It’s the perfect side for all your summer barbecues!

Start by shredding the carrots and the cabbage. To make this recipe super quick and easy, you can certainly use a couple of packages of coleslaw mix that have the shredded cabbage and carrots all ready to go. I typically have whole cabbage heads in the fridge and it’s a snap to shred them. Plus it’s much more economical to shred the cabbage yourself.

Look how gorgeous this green cabbage is.

To shred cabbage, start by cutting cabbage heads in half and then into quarters. Remove the core and thinly slice each wedge of cabbage into thin ribbons. It’s so very easy to do and takes just a few short minutes.

Place the shredded red and green cabbage in a large bowl.

Add the shredded Carrots. Toss to combine.

Shred carrots using a the large side of a box grater.

Easy peasy so far, right? Next it’s time to make the dressing. Gather together the extremely long list of dressing ingredients. Just kidding, you only need 3 ingredients plus salt & pepper.

In a small bowl whisk together the mayonnaise, apple cider vinegar, salt and pepper until the dressing is smooth and there are no lumps.

Pour the dressing over the cabbage and carrots.

Stir to combine and coat carrots and cabbage with the dressing.

Cover and refrigerate overnight.

Stir and serve chilled.

So colorful!

This classic coleslaw is creamy and delicious but it’s too sweet. The addition of vinegar adds just a touch of tang that makes the dressing utterly delectable.
