Avocado Toast

- 2 slices hearty wheat bread
- 1 ripe avocado
- lemon juice
- 8 cherry tomatoes, cut in half
- 2 tbsp red onion, chopped
- 4 strips cooked and crumbled bacon, optional
- 2 large eggs
- 1 tbsp butter
- salt & pepper
- hot sauce, optional
Toast slices of wheat bread until golden brown. Set aside.
Scoop out the flesh of the avocado and mash it with a fork or pastry cutter. Season with a squeeze of lemon juice, and salt and pepper to taste.
Spread mashed avocado onto each slice of toasted bread.
Top with chopped red onion, tomato, and crumbled bacon if using.
In a skillet, melt butter and fry eggs until whites are cooked but yolks remain runny. Be careful not to break the yolks as you cook the eggs.
Top each avocado toast with an egg.
Season with salt and pepper.
Serve with hot sauce on the side.
