Avocado Toast

Ingredients
  

  • 2 slices hearty wheat bread
  • 1 ripe avocado
  • lemon juice
  • 8 cherry tomatoes, cut in half
  • 2 tbsp red onion, chopped
  • 4 strips cooked and crumbled bacon, optional
  • 2 large eggs
  • 1 tbsp butter
  • salt & pepper
  • hot sauce, optional

Instructions
 

  • Toast slices of wheat bread until golden brown. Set aside.
  • Scoop out the flesh of the avocado and mash it with a fork or pastry cutter. Season with a squeeze of lemon juice, and salt and pepper to taste.
  • Spread mashed avocado onto each slice of toasted bread.
  • Top with chopped red onion, tomato, and crumbled bacon if using.
  • In a skillet, melt butter and fry eggs until whites are cooked but yolks remain runny. Be careful not to break the yolks as you cook the eggs.
  • Top each avocado toast with an egg.
  • Season with salt and pepper.
  • Serve with hot sauce on the side.
