Avocado Toast; A Quick, Easy To Make, Nutritiously Delicious Breakfast

Avocado toast is having a serious moment. It’s everywhere you go! Very on trend! You’ll find it on just about every coffee shop and restaurant menu. And why not? It’s an extremely healthy breakfast that’s easily customizable and tastes great! The good news? You don’t have to hit up a local restaurant to enjoy it either. It takes just a few quick minutes to prepare, which means you can enjoy it at home any time you please. Avocado toast? Yes please!!!

I enjoyed my very first avocado toast recently when we were on a trip to the coast. I was hooked after my very first bite! As I inhaled my breakfast I deconstructed it so I could recreate it at home. Cause that’s how I roll!

So what exactly made it so awesome? Perfectly ripe avocados, duh, that’s a no brainer, and a good hearty bread is equally important. Thin white sandwich bread just won’t do. A more substantial bread is definitely needed for the base. I’m a bread baker and a homemade whole wheat sourdough bread is the perfect base to start building upon.

All is right in the world when you cut into a perfect avocado!

Ditch store bought bread and Learn How To Make Whole Wheat Sour Dough Bread Made With A Starter. It produces a hearty, nutty flavored loaf that’s the perfect base for this avocado toast. It’s easier to bake bread than you think, but if you haven’t attempted it yet, be sure to use a hearty nutty bread as the base for your toast.

Toast slices of wheat bread until golden brown. Set aside.

Scoop out the flesh of the avocado and mash it with a fork or pastry cutter. Season with a squeeze of lemon juice, and some salt and pepper to taste. 

Spread the mashed avocado onto each slice of toasted bread.

Top with chopped red onion, fresh tomatoes, and crumbled bacon if using. Don’t skip the bacon! Yes it’s an indulgence but it takes the flavor over the top! 

In a skillet, melt butter and fry the eggs until the whites are cooked but the yolks remain runny. Be careful and try not to break the yolks as you cook the eggs.

For extra bacony flavor, cook the eggs in the bacon fat after cooking the bacon. YUM!

Top each avocado toast with an egg.

Season with salt and pepper, and serve with hot sauce on the side for those that like things spicy.

O-M-Gosh! This avocado toast is AMAZING!!! The bread provides a crunchy nutty base. The avocado brings a mild creaminess to the party. The bacon adds a lovely smokiness. The red onion adds some crunchy zip. The tomatoes add a fresh juiciness. All this topped with an egg fried in butter…my mouth is watering just thinking about it. Break that egg yolk with your fork and let it run down onto all the ingredients and you will be in breakfast heaven! Who ever said a healthy breakfast couldn’t be utterly delicious, never tried avocado toast!!! Life is much to short to not try Avocado Toast! Now I finally get why everyone is so obsessed with it! Nom, nom, nom…

If you like things really spicy, add some slices of Jalapeño.

Ingredients
  

  • 2 slices hearty wheat bread
  • 1 ripe avocado
  • lemon juice
  • 8 cherry tomatoes, cut in half
  • 2 tbsp red onion, chopped
  • 4 strips cooked and crumbled bacon, optional
  • 2 large eggs
  • 1 tbsp butter
  • salt & pepper
  • hot sauce, optional

Instructions
