Brussels Slaw

A colorful nutritious salad that comes together in just a few minutes. It pairs perfectly with your favorite grilled meats. It would be the perfect side to bring along to a potluck or barbecue.

For the salad:
- 1 bag shaved brussels sprouts
- 4 strips bacon, cooked and crumbled
- 2 oz Manchega cheese, crumbled
- ½ cup dried cranberries
- ½ cup roasted Cashews or Almonds
- ½ Granny Smith apple, diced
For the dressing:
- ¼ cup olive oil
- 1 tbsp Dijon mustard
- 2 tbsp Rice wine vinegar
- 1 lemon, juiced
- Salt & pepper, to taste
Make the dressing:
In a mason jar combine oil, mustard, lemon juice, vinegar, salt & pepper.
Screw lid onto jar and shake vigorously until dressing is combined.
Taste dressing and adjust to your liking.
Assemble salad:
In a large bowl combine brussels sprouts, Manchega cheese, Cashews, crumbled bacon, dried cranberries, and diced apple.
Pour dressing over salad and toss well to coat all the salad ingredients.
Cover the bowl with plastic wrap and refrigerate for 2 hours before serving.
The longer it sits, the better it tastes.
