Brussels Slaw

A colorful nutritious salad that comes together in just a few minutes. It pairs perfectly with your favorite grilled meats. It would be the perfect side to bring along to a potluck or barbecue.

Equipment

  • Mason jar with tight fitting lid.

Ingredients
  

For the salad:

  • 1 bag shaved brussels sprouts
  • 4 strips bacon, cooked and crumbled
  • 2 oz Manchega cheese, crumbled
  • ½ cup dried cranberries
  • ½ cup roasted Cashews or Almonds
  • ½ Granny Smith apple, diced

For the dressing:

  • ¼ cup olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp Rice wine vinegar
  • 1 lemon, juiced
  • Salt & pepper, to taste

Instructions
 

Make the dressing:

  • In a mason jar combine oil, mustard, lemon juice, vinegar, salt & pepper.
  • Screw lid onto jar and shake vigorously until dressing is combined.
  • Taste dressing and adjust to your liking.

Assemble salad:

  • In a large bowl combine brussels sprouts, Manchega cheese, Cashews, crumbled bacon, dried cranberries, and diced apple.
  • Pour dressing over salad and toss well to coat all the salad ingredients.
  • Cover the bowl with plastic wrap and refrigerate for 2 hours before serving.
  • The longer it sits, the better it tastes.
