Brussels Slaw

Not only is this a nutritious salad, it’s also one of the tastiest salads you can make. Salty, savory, sweet, and tart with a nice crunch, it’s a flavorful taste sensation for your tastebuds. It’s so yummy, you aren’t even going to know that it’s good for you too.

Toss this together and let it hang out in the fridge for a few hours before serving. The longer it sits, the better it tastes. No mayo in the dressing makes it the perfect salad to bring to your 4th of July get together.

Make the dressing:

In a mason jar combine oil, mustard, lemon juice, vinegar, salt & pepper.

Screw lid onto jar and shake vigorously until dressing is combined.

Taste dressing and adjust to your liking.

Assemble salad:

Place Brussels sprouts in a large bowl and add diced apple.

Add crumbled bacon.

Add cashews.

Add cranberries and crumbled Manchega cheese.

Pour dressing over salad and toss well to coat all the salad ingredients.

Cover the bowl with plastic wrap and refrigerate for 2 or more hours before serving.

The longer it sits, the better it tastes.

Equipment

  • Mason jar with tight fitting lid.

Ingredients
  

For the salad:

  • 1 bag shaved brussels sprouts
  • 4 strips bacon, cooked and crumbled
  • 2 oz Manchega cheese, crumbled
  • ½ cup dried cranberries
  • ½ cup roasted Cashews or Almonds
  • ½ Granny Smith apple, diced

For the dressing:

  • ¼ cup olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp Rice wine vinegar
  • 1 lemon, juiced
  • Salt & pepper, to taste

Instructions
