Burrito Casserole

This is the perfect meal when you want to get a tasty dinner on the table but you're too tired to spend more than 5 minutes in the kitchen.

- 4 frozen chicken burritos
- 1 can enchilada sauce, green or red
- 1 cup cheddar cheese, grated
- sour cream, to serve
- garnish with chopped cilantro, optional
Pour 1/2 cup enchilada sauce in the bottom of a casserole dish to coat.
Place burritos in the casserole dish in a single layer.
Pour remaining enchilada sauce evenly over the burritos to cover completely.
Cover casserole dish with foil.
Bake for 40 minutes at 375°.
Remove foil and top casserole evenly with shredded cheese.
Return casserole dish to the oven and continue to bake until cheese has completely melted, about 10-15 minutes.
Turn oven to broil and cook an additonal 3-5 minutes until cheese is bubbly and beginning to brown slightly.
Allow casserole to rest for 10 minutes before serving.
Top with a dollop of sour cream and garnish with chopped Cilantro to serve.
