Burrito Casserole

Do you ever have one of those days, when you get so involved in a project that the day slips away. You realize it’s dinnertime when your tummy starts rumbling and the kids are whining that they’re hungry. You have zero energy to cook but want something tasty to feed the family.

No need to order take out. Instead, whip up this three ingredient recipe and have dinner on the table with almost no effort. It checks all the boxes, quick, easy, only 3 ingredients plus it’s tasty too!

It’s so easy to put together I’m embarrassed to even call this a recipe. It takes less than 5 minutes of effort to put it together. That gives you plenty of time to chill on the couch while the oven does all the work for you.

Change this up to suit your tastes and so it works with what you already have on hand. If you prefer beef burritos use them instead of chicken. Looking for a no meat option? Bean burritos would work beautifully for this recipe. You can use a red enchilada sauce if that is what you have on hand. Topping this casserole with a pepper jack cheese or Mexican blend cheese would be delicious! I used cheddar because it was what I had on hand. And let’s face it, cheddar makes almost everything taste better.

To begin pour about 1/2 cup of enchilada sauce into the bottom of a casserole dish that is large enough to hold your burritos in a single layer. Tilt the dish to make sure the entire bottom of the dish is coated with enchilada sauce.

Layer in the frozen burritos.

Top with the remaining sauce, making sure to cover each burrito completely with enchilada sauce.

I only ended up using about 3/4 can of enchilada sauce.

Cover dish with foil and bake in a 375 degree oven for 40 minutes.

Remove casserole dish from the oven, remove foil and top burritos with a generous layer of grated cheese.

Return casserole to the oven and continue cooking for another 10-15 minutes until cheese is melted.

Turn on broiler and broil until cheese is bubbly and starting to turn light golden brown.

Serve with a dollop or two of sour cream.

I served these with my favorite refried beans. They baked in the oven alongside the burrito casserole. Easy peasy!

Ingredients
  

  • 4 frozen chicken burritos
  • 1 can enchilada sauce, green or red
  • 1 cup cheddar cheese, grated
  • sour cream, to serve
  • garnish with chopped cilantro, optional

Instructions
 

  • Pour 1/2 cup enchilada sauce in the bottom of a casserole dish to coat.
  • Place burritos in the casserole dish in a single layer.
  • Pour remaining enchilada sauce evenly over the burritos to cover completely.
  • Cover casserole dish with foil.
  • Bake for 40 minutes at 375°.
  • Remove foil and top casserole evenly with shredded cheese.
  • Return casserole dish to the oven and continue to bake until cheese has completely melted, about 10-15 minutes.
  • Turn oven to broil and cook an additonal 3-5 minutes until cheese is bubbly and beginning to brown slightly.
  • Allow casserole to rest for 10 minutes before serving.
  • Top with a dollop of sour cream and garnish with chopped Cilantro to serve.
