Cheesy, Garlic, Oven Roasted Asparagus

Roasting asparagus in the oven, intensifies it's flavor and makes this side a snap to prepare

Ingredients
  

  • 1 lb fresh asparagus spears
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves minced garlic
  • ½ lemon, juiced
  • salt & freshly cracked pepper, to taste
  • ¼ cup Parmesan cheese, freshly grated

Instructions
 

  • Preheat oven to 425°F.
  • Line a cookie sheet with foil and set aside.
  • Wash and trim off tough ends from each asparagus spear.
  • Spread asparagus spears out on foil lined cookie sheet in an even layer.
  • Drizzle with olive oil and balsamic vinegar, toss to coat.
  • Season with minced garlic, salt and pepper.
  • Bake for 8-10 minutes or until asparagus is tender but not overcooked.
  • Remove pan from the oven and sprinkle shredded Parmesan cheese evenly over the asparagus spears.
  • Return pan to the oven and broil until cheese is completely melted and cheese is lightly golden brown and bubbly.
  • Serve with extra lemon wedges. Enjoy!!!
