Cheesy Roasted Tomatoes

Roasting tomatoes enhances their sweetness so you can enjoy all the fresh flavors of summer in every delectable, cheesy bite.

- 4-5 Roma tomatoes
- freshly cracked pepper
- ¼ cup Parmesan cheese, freshly grated
- ¼ cup Mozzarella cheese, freshly grated
- drizzle olive oil
- 1 tbsp fresh basil, roughly chopped
- splash Balsamic vinegar
Preheat oven to 400°F.
Line a baking sheet with either a silpat liner or parchment paper.
Slice tomatoes into ¼ inch thick rounds and lay them out on prepared baking sheet in a single layer.
Top with freshly ground black pepper.
Top each tomato slice with a pinch of grated Parmesan cheese.
Top each tomato slice with a pinch of Mozzarella cheese.
Drizzle with olive oil.
Bake in the oven for 10 minutes.
Switch oven to broil and cook until cheese is bubbly and just beginning to toast and turn golden brown along the edges.
