Cheesy Roasted Tomatoes

Roasting tomatoes enhances their sweetness so you can enjoy all the fresh flavors of summer in every delectable, cheesy bite.

Ingredients
  

  • 4-5 Roma tomatoes
  • freshly cracked pepper
  • ¼ cup Parmesan cheese, freshly grated
  • ¼ cup Mozzarella cheese, freshly grated
  • drizzle olive oil
  • 1 tbsp fresh basil, roughly chopped
  • splash Balsamic vinegar

Instructions
 

  • Preheat oven to 400°F.
  • Line a baking sheet with either a silpat liner or parchment paper.
  • Slice tomatoes into ¼ inch thick rounds and lay them out on prepared baking sheet in a single layer.
  • Top with freshly ground black pepper.
  • Top each tomato slice with a pinch of grated Parmesan cheese.
  • Top each tomato slice with a pinch of Mozzarella cheese.
  • Drizzle with olive oil.
  • Bake in the oven for 10 minutes.
  • Switch oven to broil and cook until cheese is bubbly and just beginning to toast and turn golden brown along the edges.

To serve:

  • Top with freshly chopped basil and a splash of Balsamic vinegar.
