The Easiest Ever, Cheesy Oven Roasted Tomatoes

My summer garden continues to bless me with red ripe juicy tomatoes and loads of fresh basil. So I am always on the hunt for easy and tasty ways to use up the bounty from the summer garden. And nothing says summer like fresh vine ripened tomatoes paired with fresh basil!

I have what might be considered an abnormal obsession with all things Caprese! I adore the flavor combination of fresh, sweet, vine ripened tomatoes with basil. Add a drizzle of good quality olive oil and a splash of Balsamic vinegar, and my tastebuds are singing!!! Just thinking of it is making my mouth water…what about you?

These Caprese inspired oven roasted tomatoes are a delicious side dish to all your meals and they are absolutely delicious when placed on a grilled burger! It’s my hubs favorite way to enjoy them!!!

Start by preheating your oven to 400°F.

Line a baking sheet with either a silpat liner or parchment paper.

Slice tomatoes into ¼ inch thick rounds and lay them out on the prepared baking sheet in a single layer.

Top them with freshly ground black pepper.

Top each tomato slice with a pinch of grated Parmesan cheese.

TIP: For best results, use freshly grated cheeses. It melts better than the pre-shedded kind.

Then top each tomato slice with a pinch of Mozzarella cheese.

Drizzle with a little olive oil.

Bake in the oven for 10 minutes. Switch oven to broil and cook until cheese is bubbly and just beginning to toast and turn light golden brown along the edges. Keep a close eye on them so they don’t burn.

To serve, top with freshly chopped basil and a splash of Balsamic vinegar. 

Oh so very easy to make, and oh so very easy to gobble up!!! These roasted tomatoes are a new family favorite that we will be enjoying all summer long!!! Give them try, I promise you will LOVE them!!!

Ingredients
  

  • 4-5 Roma tomatoes
  • freshly cracked pepper
  • ¼ cup Parmesan cheese, freshly grated
  • ¼ cup Mozzarella cheese, freshly grated
  • drizzle olive oil
  • 1 tbsp fresh basil, roughly chopped
  • splash Balsamic vinegar

Instructions
 

  • Preheat oven to 400°F.
