Preheat oven to 425°.
In a large skillet over medium heat, cook chorizo until browned. Set aside.
Line a cookie sheet with foil.
Heat cheese sauce in the microwave in 30 second increments until it is runny and pourable.
Place ½ the bag of tortilla chips in an even layer on the foil lined cookie sheet.
Sprinkle ½ the cooked chorizo evenly over the tortilla chips.
Top with ⅓ of the grated cheddar cheese.
Top with ½ the chopped jalapeno, ½ the sliced black olives, ½ the red pepper, and ½ the diced onion.
Drizzle ½ the heated cheese sauce on the ingredients layered on the cookie sheet.
Repeat layers using up the remaining ingredients, ending with a layer of shredded cheddar cheese on top.
Bake for 15 minutes, until heated through and cheddar cheese is completely melted and hot.
Remove from oven and top with chopped tomato, green onions, and cilantro.
To serve, top each serving with a dollop of sour cream and salsa verde if desired.
