Chorizo Nachos

Ingredients
  

  • 1 lb Chorizo sausage
  • 1 bag tortilla chips
  • 2 cups cheddar cheese, shredded
  • 1 cup cheese sauce, heated
  • ½ onion, diced
  • ½ red bell pepper, diced
  • 1 can sliced black olives, drained
  • ¼ cup pickled Jalapeno slices, chopped
  • 1 medium tomato, chopped
  • ½ cup sour cream
  • ½ cup salsa verde
  • ¼ cup chopped green onions, for garnish
  • garnish with Cilantro, optional

Instructions
 

  • Preheat oven to 425°.
  • In a large skillet over medium heat, cook chorizo until browned. Set aside.
  • Line a cookie sheet with foil.
  • Heat cheese sauce in the microwave in 30 second increments until it is runny and pourable.
  • Place ½ the bag of tortilla chips in an even layer on the foil lined cookie sheet.
  • Sprinkle ½ the cooked chorizo evenly over the tortilla chips.
  • Top with ⅓ of the grated cheddar cheese.
  • Top with ½ the chopped jalapeno, ½ the sliced black olives, ½ the red pepper, and ½ the diced onion.
  • Drizzle ½ the heated cheese sauce on the ingredients layered on the cookie sheet.
  • Repeat layers using up the remaining ingredients, ending with a layer of shredded cheddar cheese on top.
  • Bake for 15 minutes, until heated through and cheddar cheese is completely melted and hot.
  • Remove from oven and top with chopped tomato, green onions, and cilantro.
  • To serve, top each serving with a dollop of sour cream and salsa verde if desired.
