Easy Peasy, Chorizo Nachos, It’s What’s For Dinner

Yes you can have nachos for dinner. It covers all the important food groups. It covers your protein, your carbs, dairy, veggies and even fruit. Tomatoes are technically a fruit, so yes nachos cover all the major food groups in the food pyramid! How awesome is that?!?!?

Did you ever think you could call nachos a healthy meal? You are officially absolved from all guilt for serving up this tastiness for dinner!!!

The chorizo sausage gives these nachos so much flavor! They are absolutely Devine!!!!! They are a huge hit whenever I serve them up!

Doesn’t that look good? All cheesy and ooey and gooey. YUM!

This cheesy pile of deliciousness comes together lickity split, so start by preheating the oven to 425°.

The best thing about this recipe? You can easily customize it and leave out any of the ingredients that your family doesn’t love.

In a large skillet over medium heat, cook chorizo sausage until browned, breaking it up into small pieces as it cooks. Set aside.

You can easily substitute ground beef seasoned with taco seasoning in place of the Chorizo sausage if that is what you have on hand. I prefer Chorizo because it is packed with flavor and we love it!

While the Chorizo cooks gather together the remaining ingredients.

Nachos just wouldn’t be nachos without some cheese goo. You can totally leave this out and just use more shredded cheese but the cheese goo sauce is lovely in these nachos! It adds a creamy sauciness, with just a hint of spice to these nachos.

Line a cookie sheet with foil.

Heat cheese sauce in the microwave in 30 second increments, stirring until it is runny and pourable. 

Place ½ the bag of tortilla chips in an even layer on the foil lined cookie sheet.

Sprinkle ½ the cooked chorizo evenly over the tortilla chips.

Top with ⅓ of the grated cheddar cheese.

Top with ½ the chopped jalapeno, ½ the sliced black olives, ½ the red pepper, and ½ the diced onion.

Drizzle ½ the heated cheese sauce on the ingredients layered on the cookie sheet.

Repeat layers using up the remaining ingredients, ending with a generous layer of shredded cheddar cheese on top. 

Bake for 15 minutes, until heated through and cheddar cheese is completely melted and hot.

We’re not quite done yet!

Remove from oven and top with chopped tomato, green onions, and cilantro.

To serve, top each serving with a dollop of sour cream and salsa verde if desired.

We gobbled these up lickity split! They were soooooooo good!!! The next time you are completely out of ideas for what to make for dinner and just don’t have the energy to make something time-consuming and complicated, whip up these nachos for a quick and easy snacky meal that your whole family will enjoy!

  • 1 lb Chorizo sausage

  • ½ onion, diced
  • ½ red bell pepper, diced
  • 1 can sliced black olives, drained
  • ¼ cup pickled Jalapeno slices, chopped
  • 1 medium tomato, chopped
  • ½ cup sour cream
  • ½ cup salsa verde
  • ¼ cup chopped green onions, for garnish
  • garnish with Cilantro, optional

Instructions
