Cast iron Comal or heavy bottom skillet
Ingredients
2
flour tortillas
½
cup
cheddar cheese,
shredded
1
tbsp
butter
2
tbsp
sour cream,
optional
pickled Jalapeño slices,
optional
salsa,
optional
Instructions
Heat skillet over medium heat.
Top a flour tortilla with ½ cup shredded cheese.
Top with another flour tortilla.
Melt butter and swirl around the pan.
Add the quesadilla and cook until golden brown on the first side and cheese starts to melt.
Flip quesadilla over and cook the other side until golden brown and cheese has completely melted.
Remove from pan. Use a sharp knife to cut quesadilla into quarters.
Top with a dollop of sour cream to serve.
Garnish with pickled Jalapeño slices and a side of salsa if desired.
