Cooking 101: How to Cook The Best Cheese Quesadilla

🚫STOP🚫!!! If you cook your quesadilla in the microwave you are missing out on one of life’s tastiest, simple pleasures, a pan fried quesadilla! In my humble opinion, one of the best flavors on the planet are flour tortillas fried in butter. Add cheese and you have one of the most phenomenal flavor profiles known to man!!!

Crunchy on the outside with melty cheese on the inside…simple deliciousness!

Sure you can make a quesadilla in the microwave, but once you’ve made it in a frying pan with some butter, and see how easy it is to cook it this way, you will NEVER EVER settle for the sad, limp, rubbery excuse of a microwaved quesadilla ever again!

Get out a frying pan, or if you have one, a cast iron skillet. Turn heat to medium and preheat the skillet.

While the skillet is getting hot, shred some cheddar cheese. Our favorite is cheddar but you could also use a Colby Jack or Mexican blend cheese. Use your favorite, as longs it melts well you are good to go.

Lay out a flour tortilla and top with about a 1/2 cup of shredded cheese.

I added some Mozzarella for extra cheesiness! ☺️

Top with another flour tortilla.

Once the pan is hot, add a tablespoon of butter to the skillet and let the butter melt.

A cast iron Comal is perfect for cooking up quesadillas.

Swirl the butter around the pan to coat.

Add the quesadilla to the pan.

Fry until golden brown on the first side and cheese starts to get nice and melty. Carefully flip with a spatula and fry on the other side until golden brown.

TIP: Adjust the heat lower if the tortilla is browning too quickly and the cheese hasn’t had a chance to melt. The melted cheese acts as “glue” to hold the tortillas together making it easier to flip the quesadilla without losing any of the cheesy filling.

Transfer fried quesadilla to a cutting board and cut into quarters.

Top with a dollop of sour cream and serve with pickled jalapeño slices and a side of salsa if desired.

These quesadillas are delicious served with a side of my absolute favorite salsa. Whip up a batch of the World’s Best Salsa for a real treat. It’s excellent with any of your favorite Mexican dishes and with tortilla chips too.

TIP: While you have the frying pan out you might as well make dessert too! Add some more butter and toss another tortilla in the pan. Cook until toasted golden brown on both sides and then sprinkle the toasted tortilla with cinnamon and sugar. You can thank me later!!!

Equipment

  • Cast iron Comal or heavy bottom skillet

Ingredients
  

  • 2 flour tortillas
  • ½ cup cheddar cheese, shredded
  • 1 tbsp butter
  • 2 tbsp sour cream, optional
  • pickled Jalapeño slices, optional
  • salsa, optional

Instructions
 

  • Heat skillet over medium heat.
  • Top a flour tortilla with ½ cup shredded cheese.
  • Top with another flour tortilla.
  • Melt butter and swirl around the pan.
  • Add the quesadilla and cook until golden brown on the first side and cheese starts to melt.
  • Flip quesadilla over and cook the other side until golden brown and cheese has completely melted.
  • Remove from pan. Use a sharp knife to cut quesadilla into quarters.
  • Top with a dollop of sour cream to serve.
  • Garnish with pickled Jalapeño slices and a side of salsa if desired.
