Crab Quiche Bites

A lovely cheesy seafood inspired appetizer that can be served hot or at room temperature. These will get gobbled up in no time.

- 2 large eggs, beaten
- ½ cup mayonnaise
- ½ cup milk
- 2 tbsp flour
- 1 tsp Sriracha sauce
- 2 cups Swiss cheese, shredded
- 8 oz imitation crab meat, chopped
- 1 bunch green onions, thinly sliced
- non-stick cooking spray
Preheat oven to 350°.
Spray a muffin tin generously with non-stick cooking spray. Set aside.
In a large mixing bowl whisk together the 2 eggs until frothy.
Add the milk, mayo, sriracha sauce, salt, and flour. Whisk until smooth and well combined.
Add crab meat, green onions and shredded Swiss cheese. Stir until combined.
Use a scoop and fill each muffin cup with the quiche mixture.
Bake for 30-35 minutes until cooked through and lightly browned along the edges.
Serve warm or at room temperature.
