Ingredients
  

  • 5 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 tbsp oil
  • 4 hot dogs, sliced
  • 2-3 tbsp tomato sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp pepper
  • ½ cup water

Instructions
 

  • Heat oil in a large skillet over medium heat.
  • Peel and dice potatoes into ½ inch cubes.
  • When oil is hot, add potatoes to the skillet and stir to coat them with the oil in the skillet. Cook for 5 minutes, stirring often until they begin to soften just slightly.
  • While the potatoes are cooking, dice the onion. Add diced onions to the skillet and stir to combine with the potatoes.
  • Slice the hotdogs and add them to the skillet. Stir to combine with the potatoes and onion.
  • Cook the mixture until potatoes are fork tender, the onions are translucent and hot dogs are heated through.
  • Add 2-3 tablespoons tomato sauce to the skillet. Stir to combine.
  • Add salt, pepper and garlic powder to the skillet.
  • Stir in ¼ cup water to make a tomato gravy. Add more water to reach desired consistency. Stir to combine all the ingredients together.
  • Cook until sauce reduces, potatoes are soft, and everything is hot and cooked through.
  • Serve meal hot.
