Depression Era Dinner, An Inexpensive, Quick & Easy Meal

I came across a cooking video for this recipe on a YouTube channel; Great Depression Cooking. The sweetest lady, Clara was making this poor man’s meal. Her family ate it during the depression when she was growing up and now she makes it for her grandson who loves it. This recipe reminded me of several inexpensive potato meals that my parents often cooked when I was growing up. We weren’t poor, but my mother was always very frugal. Both my parents grew up in Europe and lived through the horrors of WWII. They learned how to make do with very little during and after the war.

This meal would have been considered a luxury at our house because it has meat in it.

Heat oil in a large skillet over medium heat.

Peel and dice potatoes into ½ inch cubes.

When the oil is hot, add the diced potatoes to the skillet and stir to coat them with the oil in the pan. Cook for 5 minutes, stirring often until they begin to soften just slightly. 

While the potatoes are cooking, dice the onion.

Add the diced onions to the skillet and stir to combine with the potatoes.

Slice the hotdogs.

Add them to the skillet.

Stir to combine with the potatoes and onion. Cook the mixture until the potatoes are fork tender, the onions are soft and translucent, and hot dogs are heated through.

Add 2-3 tablespoons tomato sauce to the skillet. Stir to combine.

Add salt, pepper and garlic powder to the skillet.

Stir in ¼ cup water to make a tomato gravy. Add more water to reach desired consistency. Stir to combine all the ingredients together. 

Cook until sauce reduces, potatoes are soft, and everything is hot and cooked through. Serve hot.

This would be delicious topped with some sour cream.

Sometimes the simplest, inexpensive meals end up becoming our favorites. They become the meals that we end up making over and over again. Simple to make, using only everyday ingredients you probably have in your fridge and pantry all the time. Plus it’s filling and very inexpensive; it’s so very easy on your pocket book. Who doesn’t appreciate that these days. I’m betting once you try this meal it will start showing up in your regular rotation over and over.

Ingredients
  

  • 5 medium potatoes, peeled and diced

  • 2 tbsp oil
  • 4 hot dogs, sliced

  • 1 tsp garlic powder
  • ½ tsp pepper
