Easy Asian Asparagus & Pork Stir Fry

- 1 tbsp vegetable oil
- 1 lb fresh asparagus, cut into 1 inch pieces
- 1 lb pork tenderloin, thinly sliced and cut into 1 inch strips
- ½ cup low sodium soy sauce
- ½ cup rice vinegar
- 2 tbsp oyster sauce
- ½ onion, chopped
- 4 cloves garlic, minced
- ½ tsp black pepper
- ½ cup water
- 2 tsp corn starch
Heat oil in a wok over medium high heat.
Cook onions for a few minutes until they start to soften.
Add sliced pork and stir fry until cooked through.
Add garlic and cook until fragrant, about 1 minute.
Add soy sauce, rice vinegar and pepper. Stir to combine and bring to a boil.
Add asparagus and stir to combine. Cover and reduce heat.
Simmer until asparagus is tender, about 3-4 minutes.
Stir in oyster sauce and combine.
In a small bowl mix together cornstarch and water. Add the corrnstarch slurry to the pan.
Cook over medium heat until sauce thickens and turns glossy.
Serve over steamed white rice.
