Asparagus & Pork In Oyster Sauce; An Easy Asian Stir Fry

Looking for a quick and easy meal for a busy weeknight? Something that’s tasty and nutritious? This recipe checks all the boxes. I love to throw this meal together when asparagus is in season. Not only is it extremely easy to make, it’s a tasty meal that everyone will enjoy.

Cooking a delicious meal doesn’t have to be complicated or time consuming. A few simple ingredients come together to make this tasty stir fry that will come to the rescue when you are short on time but still want to feed your family a nutritious meal. Start to finish…less than 30 minutes using just a handful of ingredients. It doesn’t get much easier than this!

Start by heating a couple tablespoons of vegetable oil in a wok or large skillet over medium high heat.

Cook chopped onions for a few minutes until they start to soften.

Add sliced pork tenderloin.

Stir fry until cooked through.

Add garlic and cook until fragrant, about 1 minute.

Add soy sauce, rice vinegar and pepper.

Stir to combine and bring to a boil.

Add asparagus and stir to combine.

Cover and reduce heat. Simmer until asparagus is tender, about 3-4 minutes.

Stir in oyster sauce and combine.

In a small bowl mix together cornstarch and water. Add the cornstarch slurry to the pan.

Cook over medium heat until sauce thickens and turns glossy.

Serve over steamed white rice.

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 lb fresh asparagus, cut into 1 inch pieces
  • 1 lb pork tenderloin, thinly sliced and cut into 1 inch strips
  • ½ cup low sodium soy sauce
  • ½ cup rice vinegar
  • 2 tbsp oyster sauce
  • ½ onion, chopped
  • 4 cloves garlic, minced
  • ½ tsp black pepper
  • ½ cup water
  • 2 tsp corn starch

Instructions
 

  • Heat oil in a wok over medium high heat.
  • Cook onions for a few minutes until they start to soften.
  • Add sliced pork and stir fry until cooked through.
  • Add garlic and cook until fragrant, about 1 minute.
  • Add soy sauce, rice vinegar and pepper. Stir to combine and bring to a boil.

  • Simmer until asparagus is tender, about 3-4 minutes.
  • Stir in oyster sauce and combine.
  • In a small bowl mix together cornstarch and water. Add the corrnstarch slurry to the pan.
  • Cook over medium heat until sauce thickens and turns glossy.
  • Serve over steamed white rice.
