In a large sauce pan, heat olive oil.
Add minced onion and sauté until onion is soft and translucent, about 4-5 minutes.
Add minced garlic and cook until fragrant, about 1 minute.
To the saucepan, add beef broth, Worcestershire sauce, soy sauce, beef bullion and onion powder.
Stir to combine and increase heat. Bring sauce to boil. Simmer for 4-5 minutes.
In a small bowl, combine cornstarch and cold water to make a slurry.
Add slurry to the au jus sauce. Simmer until sauce thickens slightly.
Taste and season with salt and pepper.
Add sliced roast beef to the saucepan and simmer till beef is hot. Cover and turn off heat.
Cut rolls in half, lengthwise.
Spread with horseradish sauce if desired.
Place sliced cheese on cut sides of the bread.
Set oven to broil and toast bread until cheese is melted and bubbly.
Add warm roast beef slices to cheesy bread.
Serve with a side of au jus sauce for dipping.
