Mediterranean Chicken Meatballs

You can get these tasty, homemade meatballs on the table in about 30 minutes. They're the perfect filling for Gyros or serve them as an appetizer with Tzatziki sauce for dipping. Healthy food that's delicious! A winner, winner chicken dinner!

- 1 lb ground chicken
- ¼ cup panko breadcrumbs
- ¼ cup red onion, chopped
- ¼ cup feta cheese, crumbled
- 4 cloves garlic, minced
- 1 large egg
- 1 tsp dried oregano
- 1 tsp dried dill
- 1 tsp salt
- ½ tsp cumin
- ½ tsp pepper
To Serve:
- Naan, flat bread or pita bread
- Tzatziki sauce
- cherry tomatoes, halved
- red onion, chopped
- Arugula or Spinach
- Feta cheese, crumbled
Preheat oven to 400℉.
Line a cookie sheet with parchment paper. Set aside.
Place all the meatball ingredients in a large mixing bowl; ground chicken, panko breadcrumbs, chopped red onion, crumbled feta cheese, minced garlic cloves, egg, oregano, dill, cumin, salt, and black pepper.
Mix ingredients together using your hands until well combined.
Using a ½ inch cookie scoop, form meatballs and place them on prepared cookie sheet.
Bake for 20-25 minutes or until meatballs reach an internal temperature of 165℉.
Serve on your favorite flat bread with Tzatziki sauce, tomatoes, chopped red onion, crumbled Feta cheese, Arugula or spinach leaves.
