How To Make The Tastiest Mediterranean Chicken Meatballs

If you think that all chicken meatballs are dry and tasteless, you would be wrong. If you think that making your own meatballs is a long and laborious process, you would be wrong again. If you think that healthy can’t be utterly, mouthwateringly, delicious, you would be wrong yet again. These tasty little morsels come together quickly and are baked up in the oven so you can enjoy them even when time is short. Adding a variety of Mediterranean spices and seasonings amplifies their flavor profile and keeps them moist and tender, not dry and tasteless. Yes, heathy food can be delicious!

Start by preheating oven to 400℉.

Line a cookie sheet with parchment paper. Set aside.

TIP: Do you have trouble keeping parchment paper in place? Grease the cookie sheet with a little butter or non-stick cooking spray before you lay down the parchment paper. Problem solved!

Place all the meatball ingredients in a large mixing bowl; ground chicken, egg, panko breadcrumbs, chopped red onion, crumbled feta cheese, minced garlic cloves, oregano, dill, cumin, salt, and black pepper.

Mix ingredients together using your hands until well combined.

Using a ½ inch cookie scoop, form meatballs and place them on prepared cookie sheet.

Bake for 20-25 minutes or until meatballs reach an internal temperature of 165℉.

While the meatballs are in the oven prepare, tomatoes, chop red onion, crumble Feta cheese, and set out arugula or spinach leaves, flat bread and Tzatziki sauce.

Serve meatballs on your favorite flat bread with Tzatziki sauce and your favorite toppings.

Ingredients
  

  • 1 lb ground chicken
  • ¼ cup panko breadcrumbs
  • ¼ cup red onion, chopped
  • ¼ cup feta cheese, crumbled
  • 4 cloves garlic, minced
  • 1 large egg
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1 tsp salt
  • ½ tsp cumin
  • ½ tsp pepper

To Serve:

  • Naan, flat bread or pita bread
  • Tzatziki sauce
  • cherry tomatoes, halved
  • red onion, chopped
  • Arugula or Spinach
  • Feta cheese, crumbled

Instructions
