Mediterranean Veggie Sandwich

It's easy to get in your daily servings of vegetables with this delicious sandwich.

- 2 slices whole grain bread
- 2 tbsp Tzatziki
- 2 tbsp Hummus
- 1 oz sliced red onion
- 1 oz sliced cucumber
- 1 slice Havarti cheese
- 1 oz sliced tomato
- 1 oz sliced pepperonchini, drained
- spring mix lettuce
- alfalfa sprouts
- salt & pepper, to taste
Spread Tzatziki on one slice of bread and hummus on the other slice of bread.
Pile on lettuce, red onion, tomato, cucumber, pepperonchini, and alfalfa sprouts.
Add sliced cheese.
Cut sandwich in half to serve.
