Introducing The Mediterrainean Veggie Sandwich-Eating Your Vegetables Never Tasted So Good

This sandwich is inspired by my all time favorite veggie sandwich from my local grocery store deli counter. It’s the perfect light meal when the temperatures hit the triple digits. It’s my favorite go to when we spend the day boating on the the lake. Ain’t nobody who wants a heavy gut bomb for lunch when it’s hot and you’re sporting a swimsuit.

That’s what I call a Dagwood!!!

It’s packed with veggies that give it a wonderful crunch and there is no mayo or heavy calorie laden spreads to be found in this flavorful sandwich.

Easily customizable with your favorite veggies.

It all starts with this hearty whole grain bread. If you aren’t lucky enough to score this loaf use your favorite dark, whole grain bread for this sandwich. A dark Rye or Pumpernickel bread would be an excellent substitute. Any hearty bread will work, just stay away from soft breads that might fall apart. This is a big sammy so you need a bread that will hold together.

This sandwich gets its Mediterranean flavor from two different spreads; Tzatziki and Hummus.

Did you know that you can easily make your own hummus from scratch using healthy, good for you ingredients? It only takes a few minutes and tastes a thousand times better than anything you can get at the supermarket. Give it a try. Once you make your own, you will never settle for the chemical laden, processed, store bought kind again.

Spread one slice of bread with hummus and the other slice with Tzatziki.

Next it’s time to pile on all the veggies! I start with the lettuce and red onions.

The hummus makes a good glue to hold the sliced red onions in place.

Then add a slice of Havarti cheese.

Creamy and nutty and utterly delightful!

Yes, I used two slices. Don’t judge! LOL!

Next came a layer of sliced cucumber and summer ripened tomatoes.

There are slices of cucumber hiding under the cheese.

I finished with a healthy pile of alfalfa sprouts on one side and some sliced pepperonchini peppers on the other side for some tangy zip.

Season with a little salt and pepper if desired. Carefully place one side on top of the other and cut sandwich in half to serve.

Toothpicks will help hold all of it together.

Now that is a sight to behold! Just look at how colorful it is. The flavors come together beautifully, with all the crunchy textures from the variety of veggies, the creamy Havarti cheese and velvety hummus between a hearty, nutty whole grain bread…this sandwich is DA BOMB!!! A flavor explosion in your mouth!

Mediterranean Veggie Sandwich

Ingredients
  

  • 2 slices whole grain bread
  • 2 tbsp Tzatziki
  • 2 tbsp Hummus
  • 1 oz sliced red onion
  • 1 oz sliced cucumber
  • 1 slice Havarti cheese
  • 1 oz sliced tomato
  • 1 oz sliced pepperonchini, drained
  • spring mix lettuce
  • alfalfa sprouts
  • salt & pepper, to taste

Instructions
 

  • Spread Tzatziki on one slice of bread and hummus on the other slice of bread.
  • Pile on lettuce, red onion, tomato, cucumber, pepperonchini, and alfalfa sprouts.
  • Add sliced cheese.
  • Cut sandwich in half to serve.
  • Enjoy!
