Serve this cool and creamy cucumber sauce with all your favorite Mediterranean foods or as a refreshing dip with fresh veggies or pita chips. It's light and refreshingly delicious.

- 1 medium cucumber, about 1 cup grated
- 2 tbsp dill
- 3 cloves garlic, minced
- 2 cups plain Greek yogurt
- 1 lemon, juiced
- salt & pepper
Peel and grate cucumber using a box grater.
Place grated cucumber in a strainer and season with salt. Allow it to sit for 10 minutes.
Squeeze out excess moisture and place grated cucumber in a bowl.
Add dill, lemon juice, minced garlic, salt, pepper and Greek yogurt to the bowl with the cucumber.
Stir to combine.
Cover and refrigerate for 2 hours.
Serve with your favorite Mediterranean foods or as a refreshing, cool and creamy dip.
