A Tantalizing Tzatziki Sauce

Sure you could buy a pre-made Tzatziki sauce, but why would you when you see how easy it is to make from scratch. It takes only a few short minutes and uses all wholesome, healthy ingredients. No chemical additives, no preservatives, just fresh flavorful goodness. So just keep right on walking past the pre-made stuff and grab a cucumber, some Greek yogurt, a bunch of fresh dill, and a lemon instead.

Start by peeling and grating a cucumber using a box grater.

TIP: You can skip peeling the cucumber if you prefer. Just be sure to cut off about an inch from each end. The ends tend to be bitter.

Place grated cucumber in a strainer lined with paper towels and season liberally with salt. Allow it to sit for 10 minutes. The salt will help draw out the moisture.

After 10 minutes, squeeze out excess moisture and place the grated cucumber in a mixing bowl.

Add dill, minced garlic, salt, pepper and Greek yogurt to the bowl with the grated cucumber.

I used Kosher salt and coarsely ground black pepper.

If you don’t have fresh dill on hand, use the freeze dried variety instead. It has the same bright flavor as fresh dill and it will keep for weeks in the fridge. No more waste, gotta love that!

Add the juice of one lemon.

TIP: Substitute 2 tablespoons red wine vinegar if you forgot to grab a lemon at the market or you don’t have one on hand.

Stir to combine everything together.

Look at how creamy and refreshing it looks!

Cover and refrigerate for 2 hours.

Serve this flavorful sauce with all your favorite Mediterranean foods or as a refreshing, cool and creamy dip. Serve with fresh veggie dippers for a really healthy and delicious snack you can enjoy guilt free anytime.
