A Hearty, Quick & Easy, Meat & Potato Skillet Meal

Do you live in a household of meat and potato loving men like I do? Over the years my guys have come to enjoy meatless meals, as long as its only once in a great while. Hands down though their favorite meals are all my meat and potato dishes. Nothing wrong with a good steak and a baked potato loaded with butter and sour cream, but I like to change things up around here.

Meat, potato and veggie skillet, all in one easy to make meal.

The best way to describe this skillet? It’s kind of like an upside-down Shepard’s Pie. It has a layer of creamy mashed potatoes, and seasoned meat just like a more traditional Shepard’s Pie but instead of peas and carrots it has sautéed mushrooms in it. The potatoes are on the bottom instead of on top because the topping is a layer of melted cheddar cheese. Oh my goodness this meal is so stinkin’ good! Not only did my guys devour it, but I loved it just as much! You must give this one try! It will not disappoint, I promise!

Start by bringing a large pot of water to a boil. Add the potato chunks and cook them until fork tender, about 15-20 minutes.

Drain the potatoes and mash them with butter, heavy cream and salt.

You know anything that has creamy mashed potatoes is going to be good!

Grease an oven safe pan with butter or non stick cooking spray.

I used my cast iron skillet, but any oven safe dish will work.

Spread the potatoes out in an even layer in the bottom of prepared pan.

Preheat oven to 350° F.

While the potatoes are cooking start the beef. Cook the ground beef and diced onion over medium heat in a large skillet, until the onions are soft, breaking up the beef into crumbles as it cooks. 

Season the beef with the mushroom seasoning, paprika, salt and pepper. Stir to combine. Drain off any excess fat.

Spread the seasoned beef over the layer of mashed potatoes in an even layer.

In the same skillet that you cooked the beef, add 2 tablespoons butter and sauté sliced mushrooms.

Cook until they release their liquid and all the liquid cooks off, about 8-10 minutes.

Season mushrooms with salt and pepper. Spread sautéed mushrooms over the layer of seasoned beef.

Top everything with grated cheese. 

Bake uncovered for 15 to 20 minutes or until heated all the way through.

Switch oven setting to broil and continue cooking until cheese begins to brown along the edges and everything is hot and bubbly.

This meal comes together pretty darn quick and it’s one of the best ground beef recipes I have in my arsenal. There is never a complaint when I serve this up for dinner. Just a lot of snarfing and gobbling going on at the dinner table.

This has become a family favorite that makes an appearance at our table more often than I care to admit. And the leftovers? DELICIOUS! All the meat and potato loving dudes in your life will enjoy this meal.

Ingredients
  

For the Potatoes:

  • 2 lbs russet potatoes, peeled and cut into chunks
  • 2 tbsp butter
  • ¼ cup heavy cream
  • 1 tsp salt

For the beef:

  • ½ tsp pepper
  • 1 tsp mushroom seasoning, optional

For the mushrooms:

  • 16 oz mushrooms, sliced
  • salt & pepper
  • 1 cup cheddar cheese, grated

Instructions

  • Top everything with grated cheese.
  • Bake uncovered for 15 to 20 minutes until heated through.
  • Switch oven setting to broil and continue cooking until cheese begins to brown along the edges and everything is hot and bubbly.
