If you’re a fan of baked beans you are going to love this easy to make skillet meal. Adding ground beef and fluffy biscuits turns your favorite summertime side dish into a filling, stick-to-your-ribs, warm hearty meal that really hits the spot on a cold winter evening. Not only can you get dinner on the table in about 30 minutes, but being able to cook it up in just one skillet, makes clean up a snap! That’s a huge plus on a busy weeknight after a long day at work.

You know this is going to be good when the recipe starts with a half pound of bacon…oh yah! Cut the bacon into ½ inch pieces and cook in a large oven safe skillet over medium heat until browned and crispy. Remove the bacon from the skillet, and set aside.
Add the diced onion and ground beef to the skillet. Brown the ground beef and diced onion in the skillet breaking up the beef with a wooden spatula until it’s cooked through and the onion is soft.
Drain off excess fat. No need to lug a heavy cast iron skillet to the sink. Use the spatula to push the beef to one side of the skillet and then tilt the pan. Use tongs and wadded up paper towels to soak up the excess fat in the skillet.
Stir in the can of baked beans, barbecue sauce, ketchup, mustard, garlic powder, salt, pepper, smoked paprika and brown sugar.
Return the cooked bacon to the pan and bring the mixture to a simmer, stirring occasionally.
Remove skillet from heat and top the beef/bean/bacon mixture with a layer of the refrigerated biscuits.
Place the skillet in the oven and bake for 15-20 minutes or until the biscuits are cooked through and golden brown on top.
To serve garnish each serving with sliced green onions if desired.
Oh my goodness, this tastes like a summer barbecue in a bowl. The smokey bacon and barbecue sauce contrast beautifully with the sweetness of the brown sugar and give this dish such a wonderful flavor. The addition of ground beef gives this dish enough substance and makes it a hearty filling meal. The biscuit topping is the perfect addition and serves as an edible mop to soak up any of the sauce that’s left in the bottom of your bowl. This is a wonderful winter, easy to make meal that I will be adding to our regular rotation. Give this one a try, you will be pleasantly surprised at how tasty it is.
Cowboy Casserole Skillet Meal
Equipment
- large cast iron skillet or oven safe skillet
Ingredients
- 1 lb ground beef
- 28 oz baked beans
- ½ lb bacon
- 1 small yellow onion, diced
- ½ cup barbecue sauce
- ½ cup ketchup
- 2 tbsp yellow mustard
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
- ½ tsp smoked paprika
- 2 tbsp brown sugar
- 1 tube refrigerated jumbo size flakey biscuits
- sliced green onion, for garnish
Instructions
- Preheat oven to 350℉.
