An Easy To Make Mongolian Ground Beef Noodle Bowl

Every so often I get a serious hankering for Chinese food. Remember those awful months we all had to spend at home during Covid? Most restaurants near us were closed and we were forced to eat at home. So if I wanted Chinese food I had to figure out how to make it myself. It was during this time I dusted off several of my Chinese food cookbooks and started cooking up some really tasty Chinese meals that honestly rivaled what we used to get at our favorite Chinese restaurant. And even better? Making it at home costs only a fraction of what you will pay for take out.

This recipe has become a go to recipe. Not only is it delicious, but it’s extremely economical to make and you can make it in under 30 minutes. What’s not to love about that?

Start by cooking the spaghetti noodles according to the package instructions. Drain them and set aside.

While the noodles are cooking, brown the ground beef in a large skillet over medium heat, breaking the meat into small crumbles with a wooden spoon as it cooks. Drain off any excess fat.

Add minced garlic and ginger to the pan and cook, stirring constantly, until fragrant, for about 1 minute.

TIMESAVING TIP: If you have a Trader Joe’s nearby I highly recommend picking up their frozen crushed Ginger and crushed Garlic. Because it’s frozen, it keeps its fresh flavor much better than the minced varieties that come in jars packed in water. The packages come in 1 teaspoon servings (equivalent to 1 clove) making it easy to pop out exactly how much you need for your recipe. No more chopping and mincing required and you will always have fresh flavorful garlic and ginger on hand when you need it. I love the flavor and convenience this product provides me in the kitchen!

Add soy sauce and beef broth to the skillet, stir to combine.

Add brown sugar, stir to combine.

I originally added a 1/4 cup brown sugar but felt it made the sauce too sweet.
I have since reduced the amount to just 2 tablespoons brown sugar. Adjust to your liking.

Add hoisin sauce, stir to combine.

Add the red pepper flakes and black pepper. Stir to combine and bring mixture to a simmer. Use less red pepper flakes for a milder dish.

In a small bowl stir together water and cornstarch to make a slurry.

Add the corn starch slurry to the pan with the beef.

Bring to a simmer and continue to cook until the sauce thickens and turns glossy.

Add the cooked spaghetti noodles to the pan.

Toss them with the beef mixture to coat them with the sauce.

Serve immediately garnished with a sprinkle of sliced green onions.

Just a few basic asian ingredients and common staples and you can have a flavorful Chinese meal on the table in under 30 minutes. This is one of my go to meals when I want something yummy for dinner but I don’t have the time or energy for something more time consuming and complicated to make. Ingredients
  

  • 1 lb ground beef
  • 4 tsp minced ginger
  • 6 cloves minced garlic
  • ½ cup low sodium soy sauce
  • ½ cup beef broth
  • 2 tbsp brown sugar
  • 6 tbsp hoisin sauce
  • ½ tsp red pepper flakes
  • ½ tsp pepper
  • ¼ cup water
  • 2 tbsp corn starch
  • 16 oz spaghetti noodles, cooked and drained
  • 1 bunch sliced green onions, for garnish

Instructions
