Barbi’s Breakfast Bake; An Easy To Make Hearty Meal

This is one of those recipes that I pull out time and time again, especially when we have family or friends staying overnight. It’s also perfect served up the morning of New Years Day, after a late night of celebrations. It uses simple hearty breakfast ingredients that everyone loves, and comes together in a snap. It’s a hot, cheesy, hearty dish that will give you plenty of energy to enjoy all the fun things planned for the day. Whether that means vegging out on the couch for the day or if you have more vigorous activities planned, this is the perfect meal to start the day.

I typically make this using breakfast sausage but you could easily substitute chopped, cooked bacon. If you are a bacon fan you will love this casserole with bacon! If you are feeding a large crowd, you can easily double the recipe and make two casseroles in the same amount of time it takes to make just one. Make one using a pound of bacon and make the other using a pound of sausage. Let your guests choose which to try. Most will want to try each!

Let’s get this recipe going already! Here is what you will need.

Crescent dough, eggs, sausage or bacon, milk, eggs and salt & pepper. That’s it!

First order of business is to cook the sausage (or bacon) in a large skillet until browned and cooked through. Drain off any excess fat.

Lightly grease a 11 X 7 inch baking dish.

Roll out the crescent dough. An 11 X 7 inch baking dish is the perfect size for the dough, but you can easily use a 13 X 9 inch dish. Just stretch out the dough so that it completely covers the bottom of the dish and comes up the sides a bit.

If you can’t find the Crescent dough sheets you can use the Crescent roll dough instead. Just be sure to pinch the seams together so none of the liquid soaks through the seams underneath the dough. Soggy dough, not good!

Top the Crescent dough with half the grated Jack and Cheddar cheese.

Top the cheese with the cooked sausage meat, or cooked, diced bacon if using bacon.

Top with the remaining cheese, yes, more cheese please!

In a mixing bowl, whisk together the eggs, milk, salt & pepper until well combined.

Pour the egg mixture evenly over the cheese and sausage in the baking dish.

Bake in a 350 degree oven for 30 – 40 minutes, until golden brown along the edges and the center of the casserole is cooked and not jiggly liquid in the center. Keep baking until center is firm.

Let rest for 10 minutes to allow the egg to completely set up before serving.

While the casserole is in the oven you’ll have plenty of time to whip up a fresh fruit salad or fresh fruit yogurt parfait to round out the meal! Top your favorite Greek yogurt with your favorite berries and serve with a side of crunchy granola and some honey to drizzle over the top.

Cheesy and meaty with a flakey crust makes this breakfast egg bake perfect for those lazy mornings at home.

Equipment

  • 11X7 inch oven safe casserole dish

Ingredients
  

  • 1 lb bulk breakfast sausage
  • 1 tube refrigerated Crescent roll dough
  • 1 cup Cheddar cheese, grated
  • 1 cup Monterey Jack cheese, shredded
  • 4 large eggs
  • ¾ cup milk
  • 1 tsp salt
  • ½ tsp pepper

Instructions
 

  • Preheat oven to 350°F.
  • Cook breakfast sausage in a large skillet over medium heat, breaking it up into crumbles with a wooden spatula as it cooks. Drain off any excess fat.
  • Lightly grease a 7×11 inch baking pan.
  • Unroll and lay crescent roll dough flat in the bottom of the pan.
  • Top with ½ thee grated cheese then top with sausage.
  • Top with remaining cheese.
  • Whisk together eggs, milk, salt and pepper in a large bowl; pour over cheese/sausage, crescent dough.
  • Bake in preheated oven for 30-40 minutes, until bubbly and lightly browned along the edges and rolls are baked.
  • Shake baking dish gently before removing from oven to ensure the eggs in the center are cooked. If center jiggles cook longer until eggs are set.
  • Let stand for 10 minutes before serving.
