Ok I admit it, we love Mexican food! I stumbled onto this recipe years ago and I don’t even remember where I found it. It became an instant family favorite.
It comes together quickly, uses ingredients you probably already have on hand and any leftovers you have make a great lunch reheated the next day!
Serve this with a leafy green salad to round out the meal or try it with any one of my favorite sides, Spanish rice, refried beans or chips and guacamole.
A winner, winner beefy dinner! Ole!
Grease a 2 quart casserole dish.
Preheat oven to 400 degrees.
Brown 1 pound ground beef and drain off excess fat.
Stir in an envelope of taco seasoning, 1/2 cup milk, 1 cup shredded cheddar cheese, 16 oz. salsa and 6 corn tortillas cut into 2 inch pieces.
Stir well to combine and place in prepared casserole dish.
Top evenly with another cup of shredded cheddar cheese and a can sliced olives.
Cover casserole dish with foil.
Bake covered at 400 degrees for 30 minutes.
Uncover and let casserole rest for 10 minutes before serving.
Beefy Taco Bake
Ingredients
- 1 lb ground beef
- 1 pkt taco seasoning mix
- 1/2 cup milk
- 16 oz Salsa
- 6 corn tortillas, cut into 1 inch pieces
- 2 cups cheddar cheese, shredded
- 1 can black olives, sliced
- sour cream, to serve
Instructions
- Preheat oven to 400 degrees.
- Brown ground beef and drain off excess fat.
- Stir in taco seasoning, milk, 1/2 the cheese, salsa and tortilla pieces.
- Stir well to combine and place in prepared casserole dish.
- Top evenly with remaining cheese and sliced olives.
- Cover casserole dish with foil.
- Bake covered at 400 degrees for 30 minutes.
- Uncover and let casserole rest for 10 minutes before serving.
- Seve with a dollop of sour cream.
