Ok I admit it, we love Mexican food! I stumbled onto this recipe years ago and I don’t even remember where I found it. It became an instant family favorite.
It comes together quickly, uses ingredients you probably already have on hand and any leftovers you have make a great lunch reheated the next day!
Serve this with a leafy green salad to round out the meal or try it with any one of my favorite sides, Spanish rice, refried beans or chips and guacamole.


A winner, winner beefy dinner! Ole!

Grease a 2 quart casserole dish.
Preheat oven to 400 degrees.
Brown 1 pound ground beef and drain off excess fat.

Stir in an envelope of taco seasoning, 1/2 cup milk, 1 cup shredded cheddar cheese, 16 oz. salsa and 6 corn tortillas cut into 2 inch pieces.
Stir well to combine and place in prepared casserole dish.

Top evenly with another cup of shredded cheddar cheese and a can sliced olives.
Cover casserole dish with foil.

Bake covered at 400 degrees for 30 minutes.

Uncover and let casserole rest for 10 minutes before serving.

This meal comes together in a flash. It’s warm, satisfying and utterly delicious. Give it a try, I’m betting it becomes a family favorite in your home too!
