Beefy Taco Bake

Ok I admit it, we love Mexican food! I stumbled onto this recipe years ago and I don’t even remember where I found it. It became an instant family favorite.

It comes together quickly, uses ingredients you probably already have on hand and any leftovers you have make a great lunch reheated the next day!

Serve this with a leafy green salad to round out the meal or try it with any one of my favorite sides, Spanish rice, refried beans or chips and guacamole.

A winner, winner beefy dinner! Ole!

I forgot to include the 1/2 cup milk in the photo.

Grease a 2 quart casserole dish.

Preheat oven to 400 degrees.

Brown 1 pound ground beef and drain off excess fat.

Stir in an envelope of taco seasoning, 1/2 cup milk, 1 cup shredded cheddar cheese, 16 oz. salsa and 6 corn tortillas cut into 2 inch pieces.

Stir well to combine and place in prepared casserole dish.

Top evenly with another cup of shredded cheddar cheese and a can sliced olives.

Cover casserole dish with foil.

Bake covered at 400 degrees for 30 minutes.

Uncover and let casserole rest for 10 minutes before serving.

  • 1 lb ground beef
  • 1 pkt taco seasoning mix
  • 1/2 cup milk
  • 16 oz Salsa
  • 6 corn tortillas, cut into 1 inch pieces
  • 2 cups cheddar cheese, shredded
  • 1 can black olives, sliced
  • sour cream, to serve

Instructions
 

  • Preheat oven to 400 degrees.

  • Stir in taco seasoning, milk, 1/2 the cheese, salsa and tortilla pieces.
  • Stir well to combine and place in prepared casserole dish.
  • Top evenly with remaining cheese and sliced olives.
  • Cover casserole dish with foil.
  • Bake covered at 400 degrees for 30 minutes.
  • Uncover and let casserole rest for 10 minutes before serving.
  • Seve with a dollop of sour cream.
