Beefy Taco Bake

Whether it’s Cinco De Mayo or you are just in the mood for a Mexican meal but don’t want to spend a lot of time in the kitchen; this dish is the perfect solution. A few simple ingredients come together to make a tasty meal with really great flavor that your family will love!

I can’t remember where I first stumbled across this recipe, but over the years it has become one of our favorites. I serve this meal on a pretty regular basis, because it’s so easy to make and tastes so good! Top each serving with a dollop of sour cream, so yummy!

Ground beef, Cheddar cheese, milk, salsa, sliced olives and Taco seasoning.
It doesn’t get much easier than this!

Start by browning a pound of ground beef in a large skillet. Drain off excess fat.

Be sure to drain off the excess fat.

Add taco seasoning and milk. Stir to combine with ground beef.

Add salsa, and stir to combine.

Add your favorite salsa.

Next cut up 6-8 corn tortillas into 1-2 inch pieces and add to the skillet.

Add corn tortilla pieces.

Remove pan from heat and add about a cup of grated cheddar cheese and stir all ingredients together.

Spread out mixture in an even layer into a 13×9 inch casserole dish.

Not quite done, it needs some cheese!

Add an even layer of grated cheddar cheese over the top and then add sliced olives.

You can never have enough cheese!

Cover with foil and bake at 400 degrees for 30 minutes. Remove from oven, uncover and let sit for 10 minutes before serving.

Look at that melty, cheesy goodness!

Beefy Taco Bake

1 lb. ground beef
1 pkt. Taco seasoning
1/2 cup milk
16 oz. jar salsa
6 to 8 6-inch corn tortillas, cut into 2 inch pieces
2 cups shredded cheddar cheese
1 can sliced olives, drained
Serve with a dollop of sour cream

Grease a 13×9 inch casserole dish.

Preheat oven to 400 degrees.

Brown ground beef and drain off excess fat.

Stir in taco seasoning, milk, 1/2 the cheese, the jar of salsa and tortilla pieces.

Stir well to combine and place in prepared casserole dish.

Top evenly with remaining cheese and sliced olives.

Cover casserole dish with foil.

Bake covered at 400 degrees for 30 minutes.

Uncover and let casserole rest for 10 minutes before serving.

Top each serving with a dollop of sour cream and serve with either refried beans or Spanish rice to round out the meal.
