Do you ever get a hankering to eat something that’s truly good for you? But, and this is a huge but…it has to taste delicious too! Oh, and it has to be easy to prepare as well! If you’re like me, even though I have the best of intentions, when it comes to making a complicated, time consuming healthy meal on a busy weeknight, 9 times out of 10, I will resort to ordering a pizza or pick up something from the drive thru on my way home after a busy day. What if you could whip up a healthy meal, that tastes great and is also easy to make? Would you be interested? If you said yes, keep reading to find out how to make these delectable Chicken Lettuce Wraps for dinner tonight. You can thank me later!

How To Make Chicken Lettuce Wraps:
Cook the ground chicken in olive oil over medium heat until cooked through, breaking it up into small crumbles as it cooks. Drain off any excess fat in the pan.

Add diced red onion, diced red bell pepper, shredded carrots and thinly sliced cabbage to the pan with the chicken. I used Napa cabbage but if you have some green cabbage in the fridge that needs using up toss that right on in there.




Cook stirring frequently, until the vegetables are tender, about 4-5 minutes.

Add the minced garlic and fresh ginger. Cook till fragrant, about 1 minute.

Pour in the soy sauce, rice vinegar and sweet chili sauce. Stir and simmer the mixture for 3-4 minutes, or until heated through and all the ingredients are well combined.



Season with salt and pepper.


Remove meat mixture from heat and scoop a generous amount of it onto lettuce leaves. These are so tasty, you’re not even going to miss the carbs from a tortilla or wrap.

Top meat mixture with some chopped cilantro, sliced green onions, and chopped peanuts to serve.



OPTIONAL: Serve lettuce wraps with a side of white rice.

Oh my goodness…these lettuce wraps are da bomb! They are made with a handful of healthy ingredients and take just a few minutes to cook up. This is one dish that even my picky, veggie hating kids will eat with enthusiastic gusto. For the lettuce haters in the family serve the meat filling over steamed white rice and you’ll get no complaints. My youngest swears lettuce tastes like grass. I’m afraid to ask him how he knows this fact…LOL. For the rest of us normal peeps, we’ll be happily shoveling these chicken stuffed lettuce leaves into our gullets.

This is one dish where you will easily get your kids to eat their veggies, with no complaints! It’s such a colorful and pretty meal. Easy to prepare, healthy and delicious. It checks all the boxes!
