Growing up, my Dad often made this creamy cucumber salad. I recently had the opportunity to spend a day with my aunt and she made this delicious cucumber salad for us to enjoy with our dinner.
The foods that our parents and grandparents cooked are the family traditions that have been passed down for generations and can quickly disappear if we aren’t paying attention. Those meals are the tastes that are unique to each family and bring us together like nothing else can.
I’m not sure if this recipe is Hungarian or German, the lines between the two gets blurred in my family but this salad is a crunchy, creamy refreshing delight.
Cucumber Salad
- 2-3 cucumbers
- 2-3 cloves minced garlic
- 1 teaspoon paprika
- 1 tablespoon salt
- 1/4 cup sour cream
Using a vegetable peeler, peel and thinly slice cucumbers into a large bowl.
Sprinkle with salt and toss to coat. Let the cucumbers sit for 1 hour and then press them with your hands to remove excess juice.
Place cucumbers in another bowl. Add minced garlic, paprika and sour cream. Stir well to combine all the ingredients. Add salt to taste.
Refrigerate for at least 30 minutes before serving.
