Making really good onion rings is challenging. Getting the batter to stick to the rings, making sure they are light and crispy and not a doughy mess is a lot harder to get right than it may seem. Honestly, most restaurants have a hard time getting them right.
If you are a fan of batter dipped onion rings that are light and crispy then these onion fritters are a dream come true. They are easy to make, fry up light and golden brown with an onion yumminess that rivals the best onion rings you have ever eaten. This fritter batter rivals the crunchy light batter on your favorite onion rings.
They fry up light and crunchy with a delightful oniony goodness.
In a large bowl, mix together flour, sugar, cornmeal, baking powder and salt.
Then add milk and stir until the lumps are gone.
TIP: To make these fritters even more crave worthy, add a 1/4 cup crumbled, cooked bacon to the batter before cooking. Is your mouth watering now? Mine sure is!!!
Stir in paprika, onion powder and pepper.
Stir to combine and you have a thick batter, similar to the consistency of a pancake batter. Add the diced onions, and mix until well blended.
Heat 1/4 inch oil in skillet over medium high heat. Drop 1/4 cup batter into the hot oil.
Flatten batter slightly with the back of a spatula, then brown fritters on both sides until crispy, golden brown.
Drain fritters on paper towels.
Top with shredded cheese if desired.
Serve with a side of Ranch dressing for dipping.

- ¾ flour
- 1 tbsp sugar
- 1 tbsp cornmeal

- 1 tsp salt
- 1 tsp paprika
- 1 tsp onion powder
- ½ tsp pepper
- ¾ milk
- 2½ cups onion, diced
- vegetable oil, for frying
- shredded Jack or Cheddar cheese, for serving
- Ranch dressing, for serving
