Cucumber Sandwiches

I was recently invited to attend an afternoon High Tea. To be quite honest, I wasn’t really sure what to expect. I thought it would be a rather hoity-toity affair with minuscule amounts of froufy food served in a stuffy, uptight atmosphere with everyone lifting their pinky fingers while sipping from fragile teacups. Boy oh boy was I wrong on all counts! Yes there was tea, and yes a few of the ladies lifted their pinkies as they sipped their tea from delicate beautiful bone china teacups, but I have to admit it was one of the most enjoyable, tasty and fun afternoons I’ve spent in a great long while. Yes it was a very girlie event, but there was definitely no shortage of good food, good conversation and plenty of laughter to go around. Each lady contributed something special for the gathering and we all got to sample an abundant variety of tasty treats. I was asked to bring a sandwich so I did a little research and decided to make these traditional cucumber sandwiches for the event. They are surprisingly easy to make and utterly delectable! Who woulda thunk?!?!

How To Make Cucumber Sandwiches:

Place softened cream cheese, mayonnaise, dried dill, chives, lemon juice, garlic powder, salt and pepper in a mixing bowl.

Whisk together in the bowl of a stand mixer with the whisk attachment until combined and the mixture is smooth and creamy, about 3-4 minutes.

Instead of purchasing a large bunch of fresh dill, using just a small portion of it and tossing out the rest I use this Lighthouse Freeze Dried Dill in place of fresh dill. It tastes just like fresh dill in your recipes, you need less than when using fresh and it will keep for ages, so no last minute trip to the store to pick up fresh dill required.

It’s delicious in this easy to make Tzatziki Sauce. It’s a light, refreshingly delicious, cool, creamy cucumber sauce that pairs beautifully with all your favorite Mediterranean foods.

Back to the cucumber sandwiches; once you’ve combined the herbed cream cheese, cover and refrigerate it until ready to use.

Peel and thinly slice cucumber. Place slices in a colander.

Generously salt cucumber slices. Let cucumber sit for about 10 minutes and then press out as much of the liquid as you can.

Place cucumber slices on paper towels and blot off any moisture.

Spread a thin layer of the herbed cream cheese onto a slice of bread. Top with a layer of cucumber slices. Spread a thin layer of the herbed cream cheese onto another slice of bread. Place on top of cucumber slices. Use a serrated knife to trim off the crust.

Cut each sandwich in half diagonally or into three or four thin finger sized strips. Serve immediately.

NOTES

Herbed cream cheese and cucumber slices can be prepped ahead and stored in airtight containers overnight.  Wait until you are ready to serve before assembling sandwiches to avoid the bread from drying out.

Ingredients
  

  • 16 slices white bread, about 1 loaf
  • 1 cucumber, peeled and thinly sliced
  • 1 tsp salt
  • 8 oz cream cheese, softened
  • ¼ cup mayonnaise
  • 1 tsp dried dill
  • 3 tbsp fresh chives, chopped
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions
