Easy, Cheesy, Savory Stovetop Steak Quesadillas

The perfectly seasoned steak is what really makes these quesadillas delicious. Add the melty cheese and crunchy tortillas and you have a flavor packed meal that comes together in just 30 minutes.

What is it that makes flour tortillas so delicious when they are fried in butter? Is there anything better in life than dough fried in butter? Go on, I’ll wait while you try to come up with something…

These quesadillas are loaded with healthy veggies. It’s a great way to get your kids to eat their veggies, hiding them in a cheesy, crunchy tortilla. I’m a sneaky mom that way…LOL!

Diced tomato, diced avocado, minced jalapeno.

Start by mixing all the spices together in a small bowl.

Here’s all the fabulous flavor!!!

Rub spice mixture onto sirloin steak.

Heat oil in a large skillet.

Sear steak on both sides, about 3-5 minutes per side. Do not overcook.

You could also grill the steak on the barbecue.

Remove steak from heat and allow it to rest for 5 minutes.

Slice steak into thin strips and then dice into ½ inch chunks, set aside. 

Steak will continue to cook in the quesadilla, so you want it nice and rare and juicy.

Now it’s time to assemble these quesadillas. Place a tortilla onto work surface and spread out about ½ cup of cheese. Add black beans and corn.

Lots of healthy fiber here!

Top with diced tomatoes, diced avocado, and minced Jalapeno.

Some more veggie action going on here!

Place diced steak on top of the fillings.

Add some chopped cilantro.

Sprinkle with another generous layer of cheese.

The cheese is the glue that will hold everything together.

Top with another flour tortilla, pressing all the filling ingredients together.

Melt a tablespoon of butter in a heavy bottom skillet over medium heat.

Place quesadilla in buttered skillet and cook until tortilla is golden brown.

Use a spatula to carefully flip Quesadilla. Cook until the other side is browned and the cheese is melted.

Repeat the process with the remaining ingredients. Assemble and cook remaining quesadillas.

Cut each cooked quesadilla into wedges.

Serve with lime wedges and top with a generous dollop of sour cream and cilantro.

Ingredients
  

  • 8 flour tortillas
  • 2+ cups cheddar cheese, shredded
  • ½ cup fire roasted corn, drained
  • ½ cup black beans, drained
  • 1 large tomato, chopped
  • 1 avocado, diced
  • 1 Jalapeno pepper, seeded and diced
  • 2 limes, quartered
  • ¼ cup chopped cilantro, for garnish
  • 4 tbsp butter

For Steak:

  • 1 lb Sirloin steak
  • 2 tbsp vegetable oil
  • 1 tsp Ancho chili powder
  • 1 tsp Kosher salt
  • ½ tsp smoked Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • ½ tsp Oregano
  • ½ tsp Cumin
  • ¼ tsp Cayenne

Instructions
 

  • Mix all the spices together in a small bowl.
