Easy To Make, Vietnamese Spring Rolls With Dipping Sauces

Eating your daily servings of veggies can be oh so easy to do with these spring rolls and absolutely delicious too! This snack is the perfect light and healthy lunch. It’s crunchy and delicious, the perfect healthy snack to make when you have bits of leftover veggies in the fridge that need using up! Clean out that veggie drawer, wrap it all up in a rice paper wrapper, and dip it in a flavor packed Asian inspired sauce. Just one taste of these spring rolls and you will become a veggie loving fool for sure!

How do you get your family to eat more veggies? I’m not above processing them in my food processor and mixing them into a meatloaf. Adding them to a stir fry with a flavorful sauce is another good way to get those veggies eaten. Salads are great, if you can get your kids to eat a salad. But if you have a kid that hates lettuce, like I do, that pretty much rules out salads…sigh. A raclette is another fun way to get some of those evil veggies into them.

What The Heck Is A Raclette? It’s an effortless, fun, unique meal that your family and friends will love. And…it’s chock full of good for you veggies! Kids and adults alike love grilling their own perfect bites of food on a Raclette.

In February I hosted a “GAL”-entines day with a few of my favorite lady friends. We enjoyed a wonderful afternoon together and shared a Racklette lunch with loads of fresh veggies, lots and lots of cheeses and bites of meat! It’s fast become one of our all time favorite meals to share together.

After sharing a wonderful luncheon with my girlfriends, I ended up with a fridge full of leftover veggies that I needed to use up before they went bad. What’s a girl to do? I detest wasting food! Instead of the usual tricks I decided to try something new. Cue these fresh Vietnamese Spring Rolls. They were perfect for using up all those extra veggies and the tasty dipping sauces make them fun for kids to eat. There’s something about dipping sauces that cross all veggie hater barriers…LOL! I sometimes wonder if any vegetables were ever consumed before the invention of Ranch dressing?

Eat more veggies!

There is no limit to what veggies you can use in your spring rolls. Use your favorites and what you happen to have in the vegetable drawer in your fridge. Slice them up into matchsticks or chop them up.

Veggie Ideas:

  • chopped lettuce
  • chopped cabbage
  • arugula
  • spinach leaves
  • carrots (cut into matchsticks)
  • celery (cut into matchsticks)
  • sliced red bell pepper
  • cucumber (cut into matchsticks)
  • sliced avocado
  • sliced red onion
  • snow peas
  • bean sprouts
  • broccoli of alfalfa sprouts
  • daikon, (cut into matchsticks)
  • sliced mushrooms
  • green onions

Herb Ideas:

Experiment with herbs you have growing in your garden for a variety of flavor profiles. There’s no right or wrong herbs to use.

  • cilantro
  • basil
  • chives
  • mint
  • parsley

Protein:

For a more substantial meal add some cooked protein. Do you have some leftover chicken? Beef? Pork?

  • shredded chicken
  • shrimp
  • crab
  • pork

Once you have your veggies and herbs prepped, make the dipping sauces to serve with your rolls. The sauces make these rolls oh so good and fun to eat!

Make Yum Dipping Sauce:

In a small bowl combine mayo, ketchup, garlic powder, cayenne, paprika and salt. 

Add water a tablespoon at a time to thin out the sauce. Set aside.

Make Gyoza Dipping Sauce:

If your enjoy a more savory, sour flavor profile, this quick and easy to make Gyoza dipping sauce will make your tastebuds happy. In a small bowl, stir together soy sauce, rice vinegar, sesame oil and sliced green onion. Set aside.

Make Spring Rolls:

You can find spring roll wrappers at most major grocery store chains that have an Asian food section. If you are lucky enough to have an Asian food market near you, you can most definitely find them there. They are very thin sheets and stiff when they come out of the package. Similar to a sheet of paper.

Place about an half an inch of warm water in a shallow dish, one that’s large enough that the wrappers will fit into.

Submerge a rice wrapper in the warm water for 10-15 seconds to soften it.

Place the softened wrapper on your work surface and place prepared sliced veggies and herbs of your choice in the center of the wrapper. The wrappers are very thin but surprisingly sturdy. They have some stretch to them. Be gentle and careful to not tear them when you’re them rolling up with your herbs and veggies.

Roll the softened wrapper around the ingredients in burrito fashion.

Serve spring rolls with with the dipping sauces of your choice. An Asian sweet chili sauce would also be delicious!

Hands down our favorite sauce too eat these veggie spring rolls was the Yum Sauce! It’s a flavorful, fantastic sauce. It makes eating your veggies oh so good! Keep this recipe in your arsenal when you have a bunch of veggies in the vegetable drawer of your fridge that need using up. This is such a fun and tasty alternative for serving up veggies.

Vietnamese Spring Rolls

Ingredients
  

For the Spring Rolls:

  • rice paper spring roll wrappers
  • warm water
  • lettuce leaves
  • cabbage leaves
  • carrots, cut into matchsticks
  • red bell pepper, cut into matchsticks
  • cucumber, cut into matchsticks
  • red onion, thinly sliced
  • avocado, sliced
  • cilantro
  • chives
  • mint leaves
  • basil leaves

Yum Sauce:

  • ½ cup mayonnaise
  • 1 tbsp ketchup
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp cayenne
  • ½ tsp salt
  • 1-2 tbsp water, to thin sauce

Gyoza Dipping Sauce:

  • 2 tbsp soy sauce
  • 3 tbsp rice vinegar
  • ½ tsp sesame oil
  • 1 stalk green onion, thinly sliced

Instructions
 

Make Yum Dipping Sauce:
