Slow Cooker Chicken Tacos

The tradition at our house is that when it’s your birthday Mom bakes your favorite cake and you get to choose if you want mom to cook your favorite dinner or if you want to go out for dinner.  Growing up, my oldest son always asked me to make his all-time favorite dinner, Chicken Tacos.

I can’t remember where I first found this slow cooker recipe, it’s been in my arsenal forever, but it was a hit with my family from day one.  I’ve been making them for family and friends for years, and everyone always asks me for the recipe.  

There is nothing better than walking in the door after a long day and being greeted by the tantalizing aroma of these simmering away in the slow cooker!  Just thinking of it is making my mouth water!  I’m seriously getting a hankering for some Chicken tacos!  

This recipe is also great for casual entertaining.  You can make everything in advance, set up a taco bar with assorted taco fixings and let everyone build their own tacos with the toppings they love the most.  Serve with refried beans and Spanish rice to round out the meal.  When entertaining, they pair really well with Beer-ga-ritas!

My oldest is out on his own now (yes he flew the coop) so last year for Christmas I purchased him a crockpot and I put together a cook book that included all his favorite meals.  Chicken tacos was the first recipe in the cookbook!

TIP:  Cook extra meat so you can use leftovers as the base to make chicken nachos, chicken burritos, taco salad, or chicken enchiladas.  Chicken nachos for dinner?  Maybe not all the time but why not?  After all, it’s just a deconstructed taco and your kids will think you are a super cool mom making them nachos for dinner!

Place chicken in the slow cooker, sprinkle the taco seasoning over the top.  Add enough chicken broth to cover.  Cook on low for 8-10 hours.  Shred with a fork and serve with your favorite taco toppings.

I told this was easier than ordering take out.  You didn’t believe me did you?  Easy, peasy!
