Greek Cucumber Salad

A light refreshing summer salad that uses the bounty from your garden or local farmers market. Every bite is a mouthful of pure summer goodness.

Because this recipe uses only a few simple ingredients be sure to use the freshest ingredients you can get your hands on. When summer at its peak, tomatoes are at their juiciest sweetness and cucumbers are abundant. This is the perfect recipe to use up the bounty from your summer garden!

I make this salad first and pop it in the fridge to chill while I make the rest of dinner. Just chop the ingredients and toss with the oil, red wine vinegar, salt & pepper. That’s all there is to it. Easy, peasy!

Greek Cucumber Salad

  • 2 cucumbers peeled and diced
  • 1 large tomato, seeded & chopped
  • 1 red onion, diced
  • 4 oz. crumbled Feta cheese
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • Salt and freshly ground pepper

Toss all the ingredients together in a large bowl. Refrigerate for 1-2 hours before serving to allow flavors to come together.
