How can something so easy to make, with just a few simple, everyday ingredients result in something so delicious? Not only is this one of the easiest, tastiest ways to prepare sweet potatoes, but it’s so good for you too!
Sweet potatoes are having a moment. Actually it’s been a pretty good long run. And why not? They are so versatile, tasty and healthy to boot. It’s no wonder everyone is crazy about them.
My girlfriend went grocery shopping several weeks ago and she brought me a 10 pound bag of sweet potatoes. I had 2 left and I wanted to try something a little different. I love adding them to this creamy Butternut Squash Soup. These Honey Roasted Sweet Potatoes are a fabulous side when baked in the oven. Or this unique take, Sweet Potato Tacos, absolutely delicious!
When the temperatures are close to triple digits, soup just doesn’t appeal the way it does in the dead of winter. Instead of heating up the house even more by cranking on the oven, grilling them outside is the perfect easy breezy summertime cooking method.
I found numerous recipes online for grilled sweet potatoes. The key seems to be countering the natural creamy sweetness of the grilled sweet potatoes with a bit of tartness from fresh limes and brightness with the addition of chopped cilantro.
I’m a huge fan of Cilantro, I adore the stuff. I know not everyone shares that love, so if you are one of those that can’t stand it, you can easily substitute freshly chopped parsley and it will be just as fabulous.
Start by preheating your barbecue grill to medium heat.
Use a vegetable peeler to peel sweet potoatoes. Use a sharp knife to slice sweet potatoes into ¼ inch thick slices and place them in a large mixing bowl.
Toss to coat sweet potato slices with 2 tablespoons of olive oil.
When the grill is hot, place slices on the grill. Cook on each side for 6-8 minutes or until soft on the inside and crisp on the outside.
Prepare dressing:
In a small bowl combine 2 tablespoons olive oil with chopped cilantro or parsley, and lime juice.
Season dressing with some lime zest for added freshness, and salt and pepper to taste.
To Serve:
Once sweet potatoes are cooked, toss the slices in the prepared dressing to coat.
Garnish with additional parsley or cilantro to serve if desired.
These grilled sweet potatoes will be making an appearance at our table all summer long. So easy to make and so good to eat!

- Barbecue grill

- 2 large sweet potatoes
- 4 tbsp olive oil
- 1 lime, zested and juiced
- 1 tbsp cilantro or parsley, chopped
- salt & pepper, to taste
Instructions
- Preheat barbecue grill to medium heat.
- Use a vegetable peeler to peel sweet potoatoes.
- Use a sharp knife to slice sweet potatoes into ¼ inch thick slices.
- Place sweet potato slices in a large mixing bowl.
