This recipe in several different versions has been all over the internet for several months. Not only is it one of the easiest sides you will ever make; if you can stir ingredients together in a mixing bowl you can make this casserole; it’s also one of the tastiest sides to make an appearance on your holiday table. If you’re sick and tired of the same old green bean casserole and you are a lover of all things corn, you are going to absolutely love this easy to make creamy, cheesy, corn casserole. I cut the recipe in half and serve it up all year long, not just for the holidays. It’s that good!
Jump to RecipePreheat oven to 350℉. Grease a 13 x 9 inch oven safe casserole dish. Set aside.
In a large mixing bowl combine creamed corn, drained corn, Jiffy corn bread mix, baking powder, eggs, melted butter, sour cream and 1½ cups of the grated cheddar cheese, reserving some cheese for the topping.
Stir together until well combined.
Transfer the mixture to prepared casserole dish and top with remaining shredded cheddar cheese.
Bake for 50-60 minutes until heated through and a toothpick inserted in the middle comes out clean.
Bake until edges are lightly browned and crisp like this.

- 13 X 9 inch oven safe casserole dish
Ingredients
- 2 15 oz cans creamed corn
- 2 15 oz cans whole kernel corn, drained
- 2 cups sour cream
- 2 pkgs Jiffy corn bread mix
- 2 tsp baking powder
- 2 large eggs
- 2 sticks butter, melted
- 2 cups cheddar cheese, grated
Instructions
- Preheat oven to 350℉.
- Grease a 13 x 9 inch oven safe casserole dish. Set aside.
