How To Make A Green Eggs & Ham Breakfast Casserole

Not a fan of corned beef, boring boiled potatoes, and bland boiled cabbage? What’s a girl to do when she’s invited to a St. Patricks day brunch celebration and asked to bring a holiday inspired dish to share. The price for corned beef makes it cost prohibitive when feeding a crowd so I was on the hunt for something I could bring that was festive, cost effective, easy to make, and tasty. This breakfast casserole fit the bill perfectly. Not only was I able to use up some of the holiday ham I had in the freezer from Christmas, but this dish calls for eggs with loads of cheese and a secret (good for you) ingredient that gives it a festive green tint. It’s the perfect festive, healthy, savory dish to bring to a St. Patrick’s day brunch celebration.

Grease a 13×9 inch casserole dish with either non-stick cooking spray or butter.

TIP: Open your dishwasher and place casserole dish on the open door. Any overspray will go on the inside of the dishwasher door and will be washed away when you run your dishwasher.

Cut bread into small cubes and place them in the prepared casserole dish in an even layer along the bottom. Stale bread works perfectly in this dish, so grab any loaves that you have hanging out in your fridge. Sourdough is my preference but any bread, even rolls will do. Use whatever you have on hand.

Top with 2 cups shredded Monterey Jack cheese. Any white cheese that melts well works in this dish; Swiss, Gruyere, Mozzarella, Gouda, or even Fontina.

Top with diced ham.

Here’s the secret ingredient that gives this casserole its festive green color. And it’s not an artificial food coloring that’s not healthy for anyone. Good for you finely grated broccoli gives this dish a festive green tint. Grate just the broccoli florets using the finest shred on a box grater.

In a large bowl whisk together eggs, milk, dry mustard, and salt.

Stir in grated broccoli and whisk to combine.

Pour the egg mixture over the bread cubes, cheese and ham in the casserole dish.

Top with remaining Ā½ cup of shredded cheese.

Cover casserole dish with foil and place in the refrigerator overnight.

In the morning remove casserole from the fridge and allow it to sit on the counter while oven preheats to 375ā„‰.

Bake covered for 30 minutes. Remove foil and bake for another 20-30 minutes until center is set and heated through and cheese is hot and bubbly. Turn oven temperature to broil and toast for a couple minutes until lightly browned.

I love how easy it is to make this casserole. It’s a great dish to bring to a get together since you can assemble it all the night before and pop it in the oven right before you head out the door. It’s equally delicious served piping hot from the oven or at room temperature. The salty ham with the creamy custardy eggs and melted cheese all come together in this appetizing casserole dish that’s both tasty and filling. The addition of grated broccoli gives it a festive and fun hint of green cheer and a healthy dose of vitamins. You barely notice the broccoli in this dish since it’s grated so finely. So even the broccoli haters in your life will enjoy this tasty casserole. Perfect to feed a hungry crowd at any St. Patty’s Day party.

  • 4 cups bread, cubed
  • 2Ā½ cups Monterey Jack cheese, shredded
  • 1 head broccoli, finely grate florets
  • 2 cups milk
  • 1 tsp Kosher salt
  • 1 tsp dry ground mustard

Instructions
